1 1/2 cups dates, chopped
3 eggs, well beaten
1 teaspoon vanilla
1/4 teaspoon salt
2 cups Rice Krispies
1 cup nuts, chopped
1 (14 ounce) package shredded coconut

Steps:

  • Mix sugar, dates, eggs and vanilla.
  • Cook in frying pan over medium heat until it pulls away from the sides of the pan, 5 to 7 minutes, stirring constantly.
  • Add rest of the ingredients, except for coconut.
  • When cool enough to handle, wet hands and form into small balls.
  • Roll balls in coconut.

Don't let the dates turn you off from this recipe; you can't even tell that they are the main ingredient. My grandma made these cookies every year for the Christmas holidays, and I always looked forward to them more than her sugar cookies.

1 1/2 cups dates
1 cup brown sugar
1 egg
1 cup walnuts, chopped
1 tablespoon butter
1 1/2 cups coconut
1 cup Rice Krispies

Steps:

  • Mix dates, brown sugar, egg, chopped walnuts, and butter in a cold frying pan.
  • Turn element on and cook slowly for 10 minutes.
  • Add Rice Krispies and 1 cup of the coconut.
  • Shape into balls.
  • Roll balls in coconut.
  • Store in an air tight container.

    Now add the flour, bicarb and salt to the mixture in the frying pan, followed by the egg mix. Stir until you have a smooth cookie batter.

    Press the batter down and sprinkle over the chocolate chips. Now leave on a low heat for 15–20 minutes. If you find the bottom catches, you may find it helpful to pop a lid on the pan for 5 minutes.What you should end up with is a crisp base and gooey top.

    Let it cool and set for about 15 minutes before you start eating. I like to take out slices and eat them hot with ice cream.
