I created this steak sandwich recipe for my husband. Fried onions are a family favorite, and I thought it would be amazing to put them on a sandwich. The chimichurri-inspired mayo gives fabulous freshness and flavor. —Renee Seaman, Green Township, New Jersey

1 large sweet onion
3 cups buttermilk
2 cups minced fresh cilantro
1 cup minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon plus 2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 cup mayonnaise
1/2 cup plus 3 tablespoons olive oil, divided
1 beef flat iron steak or top sirloin steak (1-1/2 pounds)
1-1/2 cups all-purpose flour
3 tablespoons taco seasoning
Oil for deep-fat frying
12 slices Italian bread (1/2 inch thick)
Optional: Fresh arugula and sliced tomato

Steps:

  • Cut onion into 1/4-in. slices; separate into rings. Place in a large bowl or shallow dish. Add buttermilk; turn to coat. Refrigerate at least 4 hours or overnight., In a small bowl, combine cilantro, parsley, garlic, 1/2 teaspoon salt and pepper. Remove 2 tablespoons herb mixture; stir into mayonnaise. Refrigerate until serving. Stir 1/2 cup olive oil into remaining herb mixture. Reserve 2 tablespoons oil mixture for serving. Place remaining oil mixture in a large bowl or shallow dish. Add beef; turn to coat. Refrigerate at least 4 hours or overnight., Drain beef, discarding marinade. Grill beef, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness, 7-9 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, drain onion rings, discarding marinade. In a shallow dish, combine flour, taco seasoning and remaining 2 teaspoons salt. Roll onion rings in flour mixture. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry onion rings, a few at a time, until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels; keep warm., Remove steak to a cutting board; brush with reserved 2 tablespoons oil mixture. Brush bread with remaining 3 tablespoons olive oil. Grill bread over medium heat until toasted, 30-60 seconds on each side., Spread mayonnaise mixture over 1 side of each toast. Thinly slice steak. Top 6 slices of toast with steak, fried onions and, if desired, arugula and tomato slices. Top with remaining toast.

2 large onions
250 grams Pastry flour
1 teaspoon Baking powder
0.25 teaspoon sweet ground paprika
0.125 liter milk
2 eggs
0.125 liter beer
salt
freshly ground peppers
vegetable oil (for frying, such as sunflower oil)
4 slices uncooked Roast beef each about 150 grams (approximately 5 ounces each)
1 tablespoon clarified butter
4 slices Iceberg lettuce
2 tomatoes
4 Ciabatta
2 tablespoons Ketchup

Steps:

  • For the onion rings, peel the onions and cut into rings. Mix the flour with the baking powder and pepper. Whisk the milk, eggs and beer. Season with salt and pepper. Coat the onions in the flour then the batter. Fry in batches in a large pot of hot oil. Remove with a slotted spoon and drain on paper towels.
  • Rinse the meat and pat dry. Sear in a grill pan in hot butter about 1 minute on each side. Remove from the pan and cover with aluminum foil. Let stand for about 3 minutes. Rinse the lettuce and pat dry. Rinse the tomatoes and cut into slices. Split and toast the rolls. Spread 1 teaspoon ketchup on each roll. Top with lettuce, tomato, steak and some of the onion rings. Serve immediately with remaining onion rings.

I was in the nursing profession many, many, years ago. When the nursing staff was allowed to take a lunch break, I would meander down to our hospital cafeteria and order up one of these sandwiches. Of course, the cafeteria chefs had a special "seasoned grill" that punctuated years and years of cooking delectable delights, the way it used to be cooked, without the use of microwaves, and or already prepared, “boiled - in - the - bag” foods that came from “Sysco”. These amazing chefs even had special spatulas that you could easily imagine the pounding and flipping going on, being delicately tossed in the air, as somehow this made the food taste even more spectacular. After paying for the sandwich, I would sit down, and carefully open the wrapper, and inhale the aroma of freshly cut ham, the sweetest, most soft bread that I have ever known, and the mixture of ham juice and a bit of butter that warmed the ham prior to marrying with the bread. Needless to say, I always looked forward to this break, and on the occasion of visiting this hospital even today, I reflect back on those days of good ol’ cooking as it used to be, and the delights these very special chefs produced. To this day I still make these at home, occasionally for lunch or a quick dinner. After the cafeteria chefs put this yummy sandwich together they would wrap it in (1) wax paper (2) then aluminum foil. By the time you got to your table, the tastes had developed and probably steamed in the combination of wax paper and foil. Either way, I guess these magical chefs will never be forgotten as this made my day complete, every single day. I hope you enjoy this sandwich as much as I. Try the wax paper and foil too, [if you have time].....you will see what I'm talking about.
