2 lbs fish fillets (of your choice)
1/2 cup all-purpose flour
1/2 cup milk
1 egg
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon oregano leaves
1/2 cup yellow cornmeal
1/2 cup vegetable oil

Steps:

  • in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
  • on waxed paper place cornmeal, dip fish into batter, then coat both sides of fish with cornmeal.
  • in 10" skittle heat oil until hot.
  • place 3 or 4 fish fillets in hot oil.
  • cook over med heat until golden brown.
  • turn and continue cooking until golden brown and fish flakes with a fork.
  • repeat with remaining fish, place fried fish on paper towel to drain any excess oil.
  • Serve with potatoes or rice.

Salt ~~amp pepper
1/3 cup Unbleached flour
1/3 cup Fine-ground cornmeal
1 cup Vegetable oil

  • "1. HEAT OVEN AND SEASON FISH Adjust oven rack to middle position an heat oven to 200 degrees. Season fish with salt and pepper and set aside. Mix flour and cornmeal together in shallow dish and set aside. 2. HEAT OIL AND BREAD FISH: Wipe out skillet with paper towels, add oil, and return to medium-high heat until shimmering. Meanwhile, dredge fish in cornmeal mixture, one piece at a time. Press on breading to make sure it adheres. 3. FRY FISH: Fry fillets until golden on both sides, about 4 minutes total (if fillets are large, you may need to fry in two batches). Remove fried fish from oil and let drain briefly on paper towel-lined plate (if necessary, keep first batch warm in oven). To serve, top succotash with fish on platter or individual plates."
