Best Baked Feta Eggs Recipe - How To Make Baked Feta Eggs image

In this Baked Feta Eggs recipe, eggs and feta are baked in a skillet with cherry tomatoes, white beans, and Kalamata olives.

shallot, cleaned and quartered lengthwise

1 tsp.

dried oregano

1/4 c.

halved Kalamata olives

1/3 c.

plus 1 tablespoon extra-virgin olive oil, divided

Kosher salt

Freshly ground black pepper

Red pepper flakes

1

(8-oz.) block feta, drained

4 large eggs, at room temperature

Basil, torn, for garnish

Crusty bread or pita, for serving

Steps:

  • Preheat oven to 400°. In a 12” baking dish or large skillet, combine tomatoes, beans, shallot, oregano, and olives. Drizzle with ? cup olive oil and season with salt, pepper, and chili flakes. Place feta in the center of tomato mixture and drizzle with remaining oil. Season feta with pepper and a pinch of red pepper flakes.  Bake for 30 minutes, then remove from oven and stir until melted feta is mixed evenly with the other ingredients in the skillet.  Return skillet to oven and bake for an additional 15 minutes. Remove pan from oven and reduce oven temperature to 375°. Give the ingredients another good stir, then make 4 wells, and crack an egg into each. Bake until white is set and yolk is still runny, about 8 to 10 minutes. Season eggs with salt and pepper and garnish with basil. Serve with crusty bread or pita for dipping.

Steps:

  • Heat butter in a skillet over medium-high heat. Beat eggs and water together, then pour into pan. Add feta cheese, and cook, stirring occasionally to scramble. Season with salt and pepper.

  • Preheat the oven to 400 degrees. Pull 6 eggs from the refrigerator to rest at room temperature. Reserve 6-8 tomatoes and combine the remaining tomatoes with the red onion, ¼ cup of olive oil, salt and black pepper in a 9-by-13-inch baking dish. Mix well to combine. Place the block of feta in the middle of the tomatoes and turn over once, so that the top is coated with olive oil. Sprinkle red pepper flakes on the feta. Bake for 35 minutes, until the tomatoes start to burst. Remove from the oven and stir in the chopped garlic, roasted red peppers, and ½ of the basil leaves, breaking up the feta and tomatoes and making a creamy sauce.
