Almond Espresso Bars Recipe: How to Make It image

1/4 cup butter, softened
1 cup packed brown sugar
1/2 cup brewed espresso
1 large egg
1-1/2 cups self-rising flour
1/2 teaspoon ground cinnamon
3/4 cup chopped slivered almonds, toasted
GLAZE:
1-1/2 cups confectioners' sugar
3 tablespoons water
3/4 teaspoon almond extract
1/4 cup slivered almonds, toasted

Steps:

  • In a large bowl, cream the butter, brown sugar and espresso until blended. Beat in egg. Combine flour and cinnamon; gradually add to creamed mixture and mix well. Stir in chopped almonds. , Spread into a greased 15x10x1-in. baking pan. Bake at 350° for 18-22 minutes or until lightly browned. , In a small bowl, combine the confectioners' sugar, water and extract until smooth; spread over warm bars. Sprinkle with slivered almonds. Cool on a wire rack. Cut into bars.

Cookie
1 cup Land O Lakes® Butter softened
3/4 cup sugar
1 teaspoon almond extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Glaze
1/2 cup semi-sweet chocolate chips
2 teaspoons shortening

Steps:

  • Heat oven to 400°F.
  • Combine butter, sugar and almond extract in bowl. Beat at medium speed, scraping bowl often, until creamy. Add all remaining cookie ingredients; beat at low speed until well mixed.
  • Shape rounded teaspoonfuls of dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. Flatten balls to 1/4 inch thick with bottom of buttered glass dipped in sugar. Bake 6-8 minutes or until edges are lightly browned. Cool completely.
  • Combine chocolate chips and shortening in small microwave-safe bowl. Microwave on Medium (50% power) 1 minute; stir. Continue microwaving, stirring every 15 seconds, until mixture is melted and smooth. Drizzle or pipe chocolate onto cookies making tree design, if desired.
