SUPER EASY COCONUT BALLS | JUST A PINCH RECIPES
If you're looking for a coconut treat or an easy edible gift to give friends, you need to try these candies. Easy to make, the filling is creamy, decadent, and full of coconut flavor. Covered in chocolate, these coconut balls remind us of a Mounds candy bar. So good, you'll find excuses to make these.

Steps:
- Melt butter slowly; add condensed milk.
- Stir in powdered sugar and salt.
- Add coconut.
- Chill until easily handled.
- Roll into balls. Insert toothpicks and place in refrigerator or freezer until firm. Remove a few at a time to prevent getting soft.
- Melt bark in a double boiler.
- Dip each ball in chocolate.
- Place on waxed paper and remove toothpicks. Let set until firm.
- ENJOY!

- If you have an immersion blender, purée the soup in the pot. If not, wait until the soup cools slightly, and purée in a food processor. Add enough coconut milk (and a little more stock or water if necessary) to bring the soup to the consistency you want. Adjust the seasoning (depending on the stock you use, you may need more or less salt), and lime juice to taste. Garnish and serve.
