Pigs in blankets meet Devils on horseback in this combo - perfect as a side with Christmas dinner or Sunday roast, or as a party canapé

12 ready-to-eat pitted prunes
12 ready-to-eat apricots
100ml dry white wine or orange juice
12 rashers streaky bacon , halved
1-2 tbsp English mustard
24 meaty chipolatas sausages (we used Cumberland)
olive oil , for brushing

Steps:

  • Soak the prunes and apricots in the wine or juice, preferably for 3 hrs or more. Smear a piece of bacon with a little mustard, then use it to wrap round a prune or apricot and a sausage. Repeat with the remaining ingredients to make 24 and arrange on a baking tray.
  • Heat oven to 220C/200C fan/gas 7, brush with a little oil and bake for 18-20 mins until cooked and golden.

I got this recipe from my sister about 10 years ago. My daughter used to ask for it a lot when she was smaller and still enjoys it today. It is a nice variation on pork chops. Enjoy!

Number Of Ingredients 8

1 medium onion, chopped small
3 tablespoons lemon juice
1 teaspoon dry mustard
1 tablespoon brown sugar
4 tablespoons ketchup
2 teaspoons Worcestershire sauce
1/3 cup soy sauce
4 -6 pork chops (1 inch thick)

Steps:

  • Place chops in an oven safe 9x13 casserole dish.
  • Mix remaining ingredients together well.
  • Pour mixture over chops.
  • Marinate in fridge for about an hour (this step is not necessary if you are pressed for time).
  • Bake in 350F oven for an hour.
  • Serve with rice or mashed potatoes.
