Store-bought shortbread cookies are given a bit of pizzaz when they're dipped into a honey-lemon syrup and sprinkled with chopped pistachios. Serve Honey-Dipped Cookies when you need an easy and impressive cookie.

Yield Makes 2 dozen cookies (serving size: 1 cookie)

Number Of Ingredients 7

1 cup sugar
? cup honey
½ cup water
2 teaspoons lemon juice
3 lemon slices
24 shortbread cookies
Finely chopped pistachios (about 1/2 cup)

Steps:

  • Combine sugar, honey, water, lemon juice, and lemon slices in a saucepan; bring to a boil. Simmer, stirring occasionally to dissolve sugar (15-20 minutes). Set aside to cool completely. Dip shortbread cookies into cooled syrup, then finely chopped pistachios to coat. Transfer to a wax paper-lined plate until set.

  • Put together honey and 1/3 cup water in a small saucepan. Heat gently, stirring till well blended. Refrigerate several hrs.In a large bowl, thoroughly mix 1 1/2 cups flour, sugar, salt and yeast. Put together lowfat milk, 1/4 cup water and butter in a saucepan. Heat over low heat till liquids are very warm (120 degrees), butter doesn't need to heat. Gradually add in to dry ingredients and beat 2 min at medium speed of electric mixer, scraping bowl occasionally. Add in egg and 1/2 cup flour. Beat at high speed for 2 min, scraping bowl occasionally. Stir in sufficient additional flour to make a stiff batter. Cover bowl; let rise till doubled in bulk, about 1 hour. Stir batter down. Drop by rounded teaspoonfuls into deep hot (375 degree) fat. Fry a couple at a time till golden, about 2 min on each side. Drain on paper towels about 1 minute. Then immerse fried doughnuts into chilled honey mix. Drain and set on wire racks to dry. If you like, dipped donuts may be rolled in finely minced pecans.
