BABY BACK PORK RIBS – INSTANT POT RECIPES



Baby Back Pork Ribs – Instant Pot Recipes image

Number Of Ingredients 16

1 rack baby back pork ribs (membrane removed)
1/4 cup brown sugar
2 tbsp chili powder
2 tsp dried parsley
1 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/4 tsp cayenne ((optional))
1 cup Water
1/2 cup apple cider vinegar
1/4 tsp liquid smoke ((optional))
1/2 cup BBQ sauce
1 cup Water
4-6 ears corn (shucked, ends trimmed and broken in half)

Steps:

  • Combine the Rub ingredients in a small dish. Rub on the front and back of the ribs.
  • Pour Rib Pot ingredients in the bottom of the pot and then place the trivet in the pot.
  • Place the ribs inside the pot, standing on their side, wrapping around the inside of the pot.
  • Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 25 minutes.
  • When the time is up, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
  • Carefully remove the ribs from the pressure cooker and set on a foil lined baking sheet. Brush with BBQ sauce and set under the broiler until sauce begins to caramelize, about 5 minutes.
  • While the ribs are under the broiler, clean the Instant Pot and refill with 1 cup of water, the trivet and the corn. Do not overfill the pot.
  • Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 3 minutes.
  • When the time is up, quick-release the pressure.

3 tablespoons butter
1 medium red or green bell pepper, sliced
1 medium onion, halved and cut into 1/2-inch slices
3 teaspoons Cajun seasoning
2 teaspoons finely chopped garlic
4 bone-in pork loin chops, 1/2 inch thick (about 1 1/2 lb), trimmed of fat
1/2 cup Progresso™ chicken broth (from 32-oz container)
1/2 cup heavy whipping cream
Cooked white rice, if desired

Steps:

  • In 12-inch nonstick skillet, heat 2 tablespoons of the butter over medium-high heat. Add bell pepper, onion and 1 teaspoon of the Cajun seasoning. Cook 7 to 10 minutes, stirring frequently, until tender. Add garlic; cook 30 to 60 seconds or until fragrant. Transfer mixture to plate.
  • Add remaining 1 tablespoon butter to skillet; melt over medium-high heat. Season both sides of pork chops with remaining 2 teaspoons Cajun seasoning. Add to skillet; cook 2 to 3 minutes, turning once, until browned.
  • Add chicken broth and vegetable mixture to skillet. Reduce heat to medium; simmer 8 to 10 minutes or until pork is no longer pink in center (145°F).
  • Remove pork to rimmed serving dish; cover to keep warm. Stir whipping cream into vegetable mixture, and cook until heated through; transfer to serving dish with pork chops. Serve warm with rice.
