This chopped salad is chock-full of colorful veggies and will be the star of any meal. Pair it with it with seared chicken, fish or boneless pork chops. Blanching the harder vegetables until they’re just al dente makes them texturally consistent with all the other vegetables in the dish. Without a dip in an ice bath afterwards, the vegetables will continue to cook, despite being removed from the burner. To get jumpstart on this salad, blanch the vegetables and mix up the vinaigrette up to 2 days in advance and store them in separate containers. Toss the all the ingredients together right before serving.

1 Tbsp Red-wine vinegar
0.5 Tbsp Fresh lemon juice
0.125 tsp Garlic clove(s) minced
0.75 tsp Dijon mustard
1 pinch(es) Table salt for dressing (or to taste)
1 pinch(es) Black pepper for dressing (or to taste)
2 Tbsp Extra virgin olive oil
0.5 cup(s) Uncooked string beans chopped into 1/2-inch pieces
1 medium Uncooked carrot(s) diced
0.5 cup(s) Corn
0.25 cup(s), minced Uncooked red onion(s) or diced
0.5 medium Sweet red pepper(s) cored and diced
2 rib(s), medium Uncooked celery diced
1 small Fresh tomato(es) seeded and diced
2 cup(s) Chopped romaine lettuce or baby gem lettuce
1 small Avocado cut in half, pit removed, flesh diced
2 Tbsp Chives thinly sliced
4 tsp Grated Parmesan cheese

Steps:

  • For the vinaigrette: In a small bowl, whisk together the vinegar, lemon juice, garlic, mustard, salt, and pepper, then slowly whisk in the oil until emulsified. Taste and add more salt and pepper if needed. Whisk again before adding dressing to the salad.
  • For the salad: Fill a large bowl with water and ice to make an ice-water bath. Bring a medium saucepan of water to a boil and salt it. Add the green beans and cook for about 2 minutes, until starting to soften. Add the carrot and corn and cook for another 1 to 2 minutes, until all the vegetables are crisp-tender. Drain and immediately transfer the vegetables to the ice-water bath to cool. Drain and pat dry with paper towels.
  • Transfer the blanched vegetables to a salad bowl. Add the onion, bell pepper, celery, and tomato, toss with the vinaigrette, and set aside to marinate for about 10 minutes. Add the lettuce, avocado, chives, and Parmesan and season with salt and pepper. Divide into bowls and serve.

½ cup diced tomatillos
½ cup fresh cilantro leaves
2 small cloves garlic, crushed and peeled
1 tablespoon finely chopped seeded jalapeño pepper
? cup extra-virgin olive oil
2 tablespoons distilled white vinegar
1 tablespoon lime juice
2 teaspoons agave syrup
¾ teaspoon kosher salt
¼ teaspoon ground cumin
4 cups chopped red cabbage
1?¼ cups thinly sliced slender multicolored carrots
1 medium yellow bell pepper, diced
1 cup diced peeled jicama (see Tip)
1 cup small grape tomatoes, halved
1 15-ounce can no-salt-added red, black or pinto beans, rinsed
1 cup diced pepper Jack cheese
1 ripe avocado, diced
Lightly crushed corn chips (optional)

Steps:

  • Combine tomatillos, cilantro, garlic, jalapeño, oil, vinegar, lime juice, agave, salt and cumin in a blender. Process until smooth.
  • Place cabbage, carrots, bell pepper, jicama, tomatoes, beans and cheese in a large bowl. Add the dressing and toss to coat. Scatter avocado over the top and garnish with corn chips, if desired.
