My mom used to make this recipe in the 60's everytime she had company. It was one of her most requested recipes. It is so delicious, and easy to make, that I always make 2 of them when I have my family over for Christmas Dinner. There are never any leftovers!

Ingredients

12 ounce(s) cream cheese, room temperature
2 - eggs, beaten
3/4 cup(s) sugar
2 teaspoon(s) vanilla
1/2 teaspoon(s) lemon juice
1 - prepared graham cracker pie crust, or homemade pie crust
FOR TOPPING
3/4 cup(s) sour cream
3 1/2 tablespoon(s) sugar
1 teaspoon(s) vanilla
PRE HEAT OVEN TO 350 DEGREES

Steps:

Pre heat oven to 350 degrees.
gather your ingredients.
place all pie ingredients into a mixing bowl.
beat ingredients with a hand mixer until light and fluffy.
Pour into prepared pie crust. (you can make your own crust by mixing 1 1/2 cups graham cracker crumbs, 6 tablespoons butter, softened, and 1/3 cup sugar. Press mixture in a 9" pie plate, and continue with recipe)
Bake in 350 degree oven for 30 minutes. Remove to wire rack and cool for 15 minutes.
Meanwhile, mix topping ingredients, pour over pie, and bake in oven for 10 more minutes.
Chill 5 hours, or overnight. Enjoy

This is a great cheese pie recipe from my Mother-In-Law. It's actually easy to make and the sour cream topping is great.

Ingredients

2 cups graham cracker crumbs
1/2 cup butter (melted)
3 tablespoons butter (melted)
3 -8 ounces cream cheese
2 cups white sugar
3 eggs
1/2 tablespoon vanilla
2 (8 ounce) packages sour cream
1/2 cup sugar
1/2 tablespoon vanilla

Steps:

To make pie crust add melted butter (1/2 cup plus 3 Tbls. butter) to graham cracker crumbs and press into pan. (Or you can purchase pre-made pie crust).
Mix cream cheese, sugar, eggs and vanilla, pour over graham cracker crust.
Bake for 30 to 40 minutes at 350 degrees. (Oven Temps. vary).
Meanwhile, blend together ingredients for topping.
Remove pie let cool for about 10 minutes. Pour sour cream topping mixture over cake. Return to oven for about 12 to 15 minutes.
Remove pie from oven, let cool some, then chill and serve.
NOTE: Do not place hot pie into refrigator straight from oven, this could harm your refrigator.
You can serve it plain or use cherry, strawberry or blueberry pie filling to top this pie. Makes for a great change.
You can also press the graham cracker crumbs into a 9" x 13" cake pan and follow the rest of the recipe to finish as a cheese cake.
