Cranberry Catch of the Day Recipe: How to Make It image

Most folks may not think of serving fish for Christmas. But a colorful cranberry sauce and pleasant pecan dressing make this entree elegant.

Number Of Ingredients 16

1-1/2 cups chopped celery
1/2 cup chopped onion
9 tablespoons butter, divided
6 cups cubed bread
3/4 cup chopped pecans
1/3 cup orange juice
1-1/2 teaspoons grated orange zest
1 teaspoon salt, divided
6 haddock, cod or halibut fillets (6 ounces each)
ORANGE-CRANBERRY SAUCE:
1/2 cup sugar
2 teaspoons cornstarch
1/2 cup water
1/2 cup orange juice
1 cup fresh or frozen cranberries
2 teaspoons grated orange zest

Steps:

  • Preheat oven to 350°. In a large skillet over medium heat, cook and stir celery and onion in 6 tablespoons butter until tender. Stir in bread cubes, pecans, orange juice, orange zest and 1/2 teaspoon salt. Transfer to a greased 13x9-in. baking dish. Arrange fillets over stuffing. , Melt remaining butter; drizzle over fillets. Sprinkle with remaining salt. Bake, uncovered, 25-28 minutes or until fish flakes easily with a fork. , In a small saucepan, combine sugar and cornstarch; whisk in water and orange juice until smooth. Bring to a boil, stirring constantly. Add cranberries; cook 5 minutes or until berries pop. Stir in orange zest. Serve with fish and stuffing.

Cranberry Fish - Simple recipe for preparing cranberry fish

Number Of Ingredients 16

Fish - 1 lb (cut into pieces)
Cranberries - 1/4 cup
Onion - 1/2 (chopped)
Garlic - 2 cloves
Tomato - 1 (diced)
Turmeric powder - ¼ tsp
Chilly powder - 2 tsp
Coriander powder- 1 tsp
Curry leaves - 4
Green chilly - 1
Mustard - ¼ tsp
Oil - 2 tbsp
Fenugreek Seeds - ¼ tsp
Asafoetida powder - ¼ tsp
Salt - to taste
Cilantro/Coriander leaves - for garnish

Steps:

  • Take a sauce pan and heat some oil in it. Now fry the onion,green chilly and garlic.
  • Next add the cranberries and tomato and saute till it is tender. After it cools, grind everything together to form a fine paste and keep aside.
  • Now take the same sauce pan, heat some oil, splutter mustard, fenugreek seeds and curry leaves.
  • Now add the ground mixture along with chilly powder, coriander powder, turmeric powder,salt and asafoetida powder and fry for 2 minutes.
  • Add the fish pieces, cover and cook for 10 minutes adding water as needed on low-medium flame. The fish is done when it becomes opaque and soft.
  • Garnish with fresh cilantro and fresh cranberries.
