Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mix sugar and cinnamon together in a bowl.
- Roll out pie crust to a 8x12-inch rectangle about 1/8-inch thick. Spread softened butter over the entire rectangle. Sprinkle cinnamon-sugar evenly over the butter. Roll up the dough tightly, starting at a shorter end. Cut roll into 1-inch slices. Place rolls seam-side down on the prepared baking sheet.
- Bake in the preheated oven until golden brown, 20 to 30 minutes. Let rest on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

- 1. On a lightly floured surface, roll out the pie crust a few times to even it out to about ?-inch thickness. 2. In a small bowl, mix the butter with the sugar, cinnamon and vanilla extract to combine. Spoon the mixture into the center of the crust. Use a spatula to spread it evenly over the entire crust. 3. Starting with the side closest to you, roll the crust into a tight spiral. Cut the finished spiral into ?-inch-thick pieces. 4. On a lightly floured surface, use a rolling pin to roll each piece into a ?-inch-thick round. Place the pieces in a pie plate, overlapping them slightly and pressing to seal. (If the pieces aren't sticking together well, use a little water to help "glue" them.) 5. Continue placing rounds of dough in the pie plate until the entire plate is full; trim any excess hanging over the edge. Use the tines of a fork to press indentations all around the edge. Chill the crust well before filling and baking, and bake according to your preferred pie recipe.

Add butter and pulse until pea-sized and some slightly larger pieces form. With the machine running, add vinegar, then ice water into feed tube, 1 tablespoon at a time, until dough starts to come together and is moist but not sticky (test by squeezing some with your fingers). Mixture will be crumbly! On a lightly floured surface, form dough into 2 balls, and flatten into a discs. Cover with plastic wrap and refrigerate until dough is cold but pliable, about 30 minutes. In a small bowl, whisk together sugar and cinnamon. On a lightly floured surface, roll one disc into a very large rectangle, about 17”-x-10”. Spread 2 tablespoons softened butter on dough then sprinkle about half the cinnamon sugar on top. Starting with one long side, roll dough into a log and pinch ends to seal. Wrap in plastic wrap and refrigerate 30 minutes. Repeat process with remaining dough. Slice each log into ½”-thick rounds. On a lightly floured large piece of parchment paper, arrange rounds in a tight circle, making sure they’re all touching. Lightly dust with flour and cover with parchment paper, then roll into a 12” circle. Refrigerate for 10 minutes. Repeat process with second log. Preheat oven to 375° and grease a pie dish with cooking spray. Place a large rimmed baking sheet in oven.
