Cupcake Christmas Tree Recipe: How to Make It image

Heather McKinley of Mechanic Falls, Maine shared this minty twist on typical cupcakes, then our Test Kitchen arranged them in a tree shape for a pretty presentation. The star on the top of the tree and cute packages tucked beneath are a snap to make with colorful candies.

1 package devil's food cake mix (regular size)
1-1/2 cups mint chocolate chips
6 tablespoons butter, softened
2-2/3 cups confectioners' sugar
4 to 5 tablespoons milk
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
1 teaspoon baking cocoa
1/4 teaspoon green paste food coloring
Candy-coated milk chocolate miniature kisses
2 chocolate stars
12 Starburst candies

Steps:

  • Prepare cake batter mix according to package directions for cupcakes; fold in chips. Fill foil-lined muffin cups two-thirds full. , Bake at 350° for 18-24 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in milk and extracts until blended. Transfer 2 tablespoons to a small bowl; stir in cocoa. Stir green food coloring into remaining frosting. , Frost 21 cupcakes with green frosting; arrange in a pyramid to form a tree. Decorate all but the top cupcake with miniature kisses for lights. Frost two cupcakes with chocolate frosting and place at base of tree for trunk; top each with a chocolate star. Save remaining cupcake for another use., With a rolling pin, roll two yellow Starburst candies flat; cut with 2-in. and 1-1/2-in. star-shaped cookie cutters. Press smaller star onto larger star; place on cupcake at top of tree. , For presents, roll five Starburst candies into 3x3/4-in. rectangles; cut each rectangle into four 3-in.-long strips. Place two strips widthwise on one whole Starburst candy; press together at base to attach. , For bow, form two strips into figure eights; press together in center and press onto wrapped candy. Repeat with remaining strips and remaining four whole Starburst candies. Place presents beneath cupcake tree.

Make delicious chocolate cupcakes with buttercream frosting for the perfect Christmas treat

Billington’s unrefined golden caster sugar
Anchor unsalted butter
cocoa powder
self raising flour
baking powder
large eggs
Billington's unrefined golden icing sugar
whole milk
green food colouring
edible Christmas sprinkles

Steps:

  • Preheat the oven to 180°C/fan 160°C/gas mark 4 and line a muffin tin with cases.

    Cream 225g of butter and the golden caster sugar together until light and fluffy. Add the eggs one by one, mixing well in between. Finally fold in the flour, cocoa and baking powder until well combined.

    Spoon the mixture evenly into the muffin cases and bake in the oven for 25 minutes or until the cupcakes are springy to the touch and a skewer comes out clean.

    To make the buttercream use an electric or hand mixer and whisk the golden icing sugar and the rest of the butter together until you get a breadcrumb texture. Add the milk and mix on high speed until light and fluffy. Add a few drops of green food colouring to the buttercream and mix until you get a ‘Christmas tree’ green colour.

    Pipe the buttercream onto the cakes in a pyramid shape and top the ‘trees’ with festive sprinkles for the perfect finishing touch.

  • For the Cupcakes: Preheat the oven to 350°F. Line 24 muffin cups with paper liners. In a large bowl, or the bowl of a stand mixer, whisk together the cocoa powder, all-purpose flour, cake flour, sugar, baking soda, baking powder, and salt until well combined. Add the eggs, buttermilk, water, oil and vanilla and mix with an electric mixer, or stand mixer, until well combined, about 2 minutes. Fill the cupcake liners 2/3 full and bake for 20 minutes or until a toothpick inserted in the center comes out with just a few crumbs. Remove from the pan and cool completely on a wire rack. For the Christmas Trees: Place the candy melts in a bowl and melt them in the microwave at 50% power for 2-3 minutes, stirring every 30 seconds, until completely melted. Place a ziplock bag or a piping bag in a cup to hold it and fill the bag with the melted candy. Seal the ziplock and cut a small hole in the corner of the bag. On a sheet of wax paper, pipe lines of candy, about 2/3 the length of a pretzel stick and press the pretzel into the candy. Then pipe lines back and forth across the pretzel to make a tree shape. Top with sprinkles for ornaments. Repeat for the remaining trees and then let the candy set completely before carefully removing the trees from the wax paper and placing them on the cupcakes. It takes 1-2 hours for the candy to set completely. For the Frosting: With an electric mixer, or in the bowl of a stand mixer, cream the butter until it is smooth and creamy, about 2 minutes. Add the powdered sugar and heavy cream and beat for a full 3 minutes until it is light and fluffy. Add a little more sugar if it’s too runny or a little more cream if it’s too thick. When the cupcakes are completely cool, decorate them by spreading a layer of frosting on top with a knife. Sprinkle the frosting with shredded coconut, or dip the cupcake into the coconut to cover it, and carefully place three Christmas trees on top of each cupcake.
