Andrew Zimmern shares his take on chicken Marbella, which might be one of the most famous chicken dishes in America.

Number Of Ingredients 22

? cup red wine vinegar
2 tablespoons dried oregano
4 cloves garlic
minced
3 shallots
minced
1 teaspoon coarse salt
1 teaspoon ground black pepper
2 chickens
quartered
2/3 cup olive oil
1 cup white wine
½ cup red vermouth
1 cup dried apricots (Andrew likes the sulfur-free ones)
1 cup pitted prunes
½ cup pitted green olives (Andrews likes to use Lucques)
¼ cup capers
rinsed well
3 fresh bay leaves (dried are fine in a pinch)
½ cup plus 3 tablespoons brown sugar
¼ cup Italian parsley
finely chopped (reserve a little for garnish)

Steps:

  • In a large bowl, combine the vinegar, oregano, garlic, shallots, salt and pepper
  • Add the chicken, coat completely and let marinate, covered, in the refrigerator for 24 hours
  • Preheat the oven to 375°F
  • Heat the oil in a large skillet over medium heat
  • Working in batches, brown the chicken well on both sides, reserving the marinade
  • Place the browned pieces skin-side up in a single layer in a big lasagna pan
  • Deglaze the skillet with the wine and vermouth, reducing by about half
  • Add the reserved marinade, apricots, prunes, olives, capers, bay leaves, ½ cup brown sugar and parsley (except for the garnish)
  • Swirl the ingredients in the liquid until the brown sugar dissolves and bring to a boil again
  • Pour the mixture over the chicken and sprinkle with the remaining 3 tablespoons brown sugar
  • Bake until the chicken is cooked through, about 1 hour
  • Place the chicken on a platter and pour all the ingredients in the pan over the top
  • Sprinkle with the reserved parsley and serve

5 chicken breasts
1 tsp salt
1 tsp pepper
1 cup water or chicken broth

Steps:

  • Season chicken breasts with salt and pepper add any additional seasoning to your liking.
  • Pour water or chicken broth into inner pot.
  • Place chicken breasts in liquid or on trivet.
  • Option 1 Fresh Chicken Press Pressure Cook/Manual and use +/- buttons to set for 8 minutes. Once the cooking time is complete, set the steam release to “venting” for Quick Release. If a crispier finish is preferred, you can swap out the pressure cooker lid for an Air Fryer Lid and cook for 1 minute, or sauté for 1 minute on each side.
  • Option 2 Shredded Chicken Press Pressure Cook/Manual and use +/- buttons to set for 10 minutes. Once the time is complete, set the steam release to “venting” for Quick Release. Drain the liquid and shred chicken breasts with forks.
  • Option 3 Frozen Chicken Breast Press Pressure Cook/Manual and use +/- buttons to set for 12 minutes. Once the cooking time is complete, set the steam release to “venting” for Quick Release. If a crispier finish is preferred, you can swap out the pressure cooker lid for an Air Fryer Lid and cook for 1 minute, or sauté for 1 minute on each side.

CHICKEN MARENGO RECIPE - NYT COOKING
In the middle of June 1800, Napoleon Bonaparte's troops were engaged in battle with Austrian forces near the small village of Marengo in northern Italy. The battle was fierce, or so the legend has it, and Napoleon, of course, emerged victorious. And hungry. He asked his chef to prepare a meal quickly and the cook scoured the countryside looking for foods to prepare. He scurried around and discovered a chicken, olive oil, tomatoes, herbs, eggs and crawfish. Within minutes, a fire was started and the chef prepared a quick sauté of the chicken with tomatoes, oil and herbs. It is said that he garnished the dish before serving it with a fried egg and crawfish. In my version, the chicken, cut into serving pieces, is simply browned in a little olive oil (I add a touch of butter to give it flavor) on both sides. I then prefer to add sliced mushrooms (there are those who declare that truffles were among the original ingredients), seasonings, wine, tomatoes and parsley and cook covered until done, about 10 minutes longer.
