3 cups water
1 cup uncooked wild rice
2-1/2 teaspoons salt, divided
1/4 cup butter, cubed
1 pound sliced fresh mushrooms
1 medium onion, chopped
3 cups diced cooked chicken
1 jar (2 ounces) chopped pimiento, drained
1/4 cup minced fresh parsley
1/4 teaspoon pepper
1 cup chicken broth
1 cup heavy whipping cream
1/4 cup grated Parmesan cheese
3/4 cup slivered almonds

Steps:

  • In a large saucepan, bring water to a boil; stir in rice and 1 teaspoon salt. Reduce heat; simmer, covered, until kernels have puffed open, 45-50 minutes. Drain any excess water., Preheat oven to 350°. In a 6-qt. stockpot, heat butter over medium-high heat; saute mushrooms and onion 5 minutes. Stir in rice, chicken, pimiento, parsley, pepper, broth, cream and remaining salt., Transfer to a 3-qt. or 13x9-in. baking dish. Sprinkle with cheese and almonds. Bake, uncovered, until heated through, 50-60 minutes.

Chicken, rice, caramelized onions and Swiss cheese come together for a comforting dinner that promises to take the bite out of any chilly night. Plus, who can resist that flaky lattice crust top?

Number Of Ingredients 10

1/2 cup butter
4 cups halved and thickly sliced sweet onions (about 2 large onions)
1 1/2 cups uncooked instant white rice
2 cups Progresso™ beef flavored broth (from 32-oz carton)
1 tablespoon Worcestershire sauce
2 cups shredded deli rotisserie chicken
1 cup shredded Swiss cheese (4 oz)
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet
1 tablespoon butter, melted
1/2 teaspoon dried thyme leaves

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, melt 1/2 cup butter over medium-high heat until sizzling. Cook onions in butter 15 to 20 minutes, stirring frequently, until onions are very soft and golden brown.
  • Stir in rice; cook 2 to 3 minutes, stirring frequently, until toasted. Stir in broth and Worcestershire sauce. Heat to simmering, stirring occasionally. Stir in chicken; cook 3 to 4 minutes or until heated. Stir in cheese, mixing to combine. Transfer hot mixture to baking dish; cover and keep warm.
  • Unroll dough on work surface; cut lengthwise into 8 strips. Arrange 4 strips lengthwise on top of filling. Cut remaining 4 in half, and lay crosswise on top of other strips to form a lattice design over chicken mixture. Brush dough with 1 tablespoon melted butter; sprinkle thyme on top.
  • Bake 18 to 22 minutes or until filling is bubbly and crust is deep golden brown. Let stand 5 minutes before serving.

  • Preheat the oven to 200°C/180°C fan/gas mark 6. Lightly grease a large roasting tray and put in the onion and garlic. Drizzle over the melted butter and give the onion a stir. Bake for 10–15 minutes, making sure it doesn’t begin to burn. Keep an eye on it – if the edges are catching too quickly, take the tray out and give it all another stir before putting it back in.

    While the onion is cooking, rub the drumsticks with the oil and mix the salt, garlic, onion and cayenne in a bowl. Cover the drumsticks all over with the spicy rub.

    Take out the tray of onion and add the rice and cardamom seeds. Stir the rice into the onion mix and put the drumsticks on top. Pour in the stock. Cover with foil and bake for 30 minutes.

    Take out of the oven, lift the chicken drumsticks on to a side plate, then add the peas to the rice and lightly stir them through. Replace the chicken pieces and bake without the foil for another 15 minutes.

    Stir in the chopped coriander and serve.
