This five ingredient dessert is easy to make and easy to eat. Try it with whichever Chex™ cereal you have on hand!

4 cups Chex™ cereal, any variety
1/2 cup lightly salted peanuts
2 cups miniature marshmallows
1 bag (11 oz) butterscotch chips
1/2 cup creamy peanut butter

Steps:

  • In large bowl, mix cereal, peanuts and marshmallows.
  • In medium microwavable bowl, microwave butterscotch chips and peanut butter uncovered on Medium to Medium-High (50 to 75%) in 1-minute increments, stirring after each minute, just until mixture is smooth and melted. This should take 3 to 4 minutes.
  • Pour over cereal mixture, using large wooden spoon to mix until cereal mixture is thoroughly coated. Drop by spoonfuls onto waxed or cooking parchment paper.
  • Let stand 15 to 20 minutes to set.

1 cup Honey
3/4 cup Creamy Peanut Butter
3/4 cup Butterscotch Chips
1 teaspoon Vanilla Extract
5 cup Corn Chex® Cereal
1 1/2 cup Salted Pretzels
1/2 cup Peanuts
2 cup Semi-Sweet Chocolate Chips
1 cup Milk Chocolate
1 tablespoon Coconut Oil
to taste Sea Salt

Steps:

  • Line a 9x13-inch baking pan with parchment paper and set aside.
  • In a large pot over low heat, melt together the Honey (1 cup), Creamy Peanut Butter (3/4 cup), and Butterscotch Chips (3/4 cup) until melted smooth, about 5 minutes, stirring often.
  • Remove from the heat. Add the Vanilla Extract (1 teaspoon) and stir. Mix in the Corn Chex® Cereal (5 cup), Salted Pretzels (1 1/2 cup), Peanuts (1/2 cup). Spread the mix out into the prepared baking dish.
  • Melt the Semi-Sweet Chocolate Chips (2 cup) and 1 tablespoon Coconut Oil (1 tablespoon) together in the microwave in 30-second increments until melted.
  • Pour the melted chocolate over the bars, spreading in an even layer.
  • Melt the Milk Chocolate (1 cup) and 1 teaspoon coconut oil together in the microwave in 30-second increments until melted. Drizzle the milk chocolate over the bars.
  • Transfer the bars to the fridge and chill 1 hour, until set. Top with Sea Salt (to taste), if desired.
  • Let the bars sit at room temp 15-20 minutes before cutting, then cut into bars.

This is just my regular Crispix, or similar type of cereal, puppy chow recipe made with butterscotch chips instead of chocolate chips; my SIL suggested it. We ate probably half the batch that evening. After making a bunch of recipes with butterscotch chips, I suggest that you use a good quality chip. I have had trouble melting some of the store brands, although Aldi's brand always seems to work well.

  • Put the Chex and pretzels (broken into pieces) in a large bowl, and set aside. In a pot, melt the butter on low heat. Add the caramels and continue stirring until they are almost all melted. Add in chocolate chips, butterscotch chips and salt. Continue to stir until everything starts to melt and then add the buttermilk. Continue stirring until everything is melted. (there were still some small chunks of caramel, which was fine...) Remove from burner and let sit for about a minute. Pour it over the Chex and pretzel mix and gently mix, being careful not to break the cereal. Add powdered sugar and mix again. Ideally, lay a piece of wax paper over a cookie sheet, transfer the mix and let cool before storing in an air-tight container or plastic zipper bag. However, I ran out of wax paper, so I let it sit in the bowl, and it was fine. Enjoy!
