Fast-and-Fabulous Egg and Cottage Cheese Casserole Rec… image

This is the easiest and best egg casserole I have tried so far. My sweet mother-in-law shared this recipe with me. I make 3 or 4 at the time and keep them in the freezer to take to gatherings, feed guests, or surprise kids. Green chilies make it pop!

Yield 1 10x13-inch casserole dish

Number Of Ingredients 9

cooking spray
10 eggs, beaten
2 (16 ounce) packages cottage cheese
1 pound shredded Monterey Jack cheese
1 (4 ounce) can diced green chiles
½ cup butter, melted
½ cup all-purpose flour
½ cup cooked crumbled bacon
1 teaspoon baking powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a 10x13-inch baking dish with cooking spray.
  • Mix eggs, cottage cheese, Monterey Jack cheese, green chiles, butter, flour, bacon, and baking powder together in a large bowl; pour into prepared baking dish.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center of the casserole comes out clean, about 30 minutes more.

This easy egg casserole is seasoned with chives, onion powder, salt, and pepper, and gets even more great flavor from a hearty helping of shredded Cheddar cheese.

Yield Makes 8 to 10 servings

Number Of Ingredients 8

3 cups seasoned croutons
15 large eggs
2 cups milk
1 teaspoon seasoned salt
1 teaspoon coarsely ground pepper
¾ teaspoon onion powder
2 tablespoons chopped fresh or frozen chives
1 ½ cups (6 ounces) shredded Cheddar cheese

Steps:

  • Place croutons in a 13- x 9-inch pan coated with cooking spray.
  • Whisk together eggs and next 5 ingredients; stir in cheese. Pour over croutons. Cover and chill 8 hours, stirring once.
  • Uncover casserole, and stir.
  • Bake at 350° for 30 minutes or until set.
