- Place the cauliflower into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until fork-tender, 5 to 7 minutes. Drain and allow to steam dry for a minute or two; chop into bite-size pieces.
- Melt 1 tablespoon butter in a skillet over medium-high heat. Cook the onion in the butter until the onion is browned, about 5 minutes. Add 3 tablespoons of butter and cook until the butter is melted. Stir in the bread crumbs and cook until the mixture bubbles. Mix the cauliflower into the skillet and cook until the cauliflower is warm, 3 to 5 minutes. Season with salt and black pepper; serve hot.

QUICK AND EASY MASHED CAULIFLOWER - INSPIRED TASTE
Mashed or “smashed” cauliflower is light, fluffy and creamy. Best of all, though, it’s easy. Our recipe calls for a little cream cheese, which adds extra creaminess. You can omit it, though. The cauliflower would still be quite delicious. We also call for a tiny bit of nutmeg, which rounds out the flavors and adds a little richness.

Steps:
- Bring a large pot of salted water to a boil. Cut cauliflower into florets then add to boiling water and cook 8 to 10 minutes or until a fork can easily be pierced through the cauliflower. Drain the cauliflower, and then throw back into the hot pot (off the heat) and cover with lid. Let stand 2 to 3 minutes.
- Add the cream cheese, a pinch of salt and freshly ground black pepper to the cauliflower. Then, use a potato masher to smash the cauliflower. Finish with a pinch of nutmeg. (If you have whole nutmeg, grate a little over the cauliflower using a Microplane). Stir then serve with sliced green onions on top.

- Rub 1 tablespoon olive oil between hands, then rub over cauliflower to apply a thin, even layer. (Alternatively, use a brush to spread oil evenly over cauliflower.) Sprinkle remaining 11/2 teaspoons sel gris over cauliflower (salt might clump in some places). Bake in preheated oven until dark brown, about 25 minutes. Remove from oven, and carefully rub with remaining 2 tablespoons olive oil. Serve hot.
