The word "tapa" in Spanish means top or cover (there are other meanings) Spain has many bars - one for every 120 persons. They are usually small and run by families. Coffee, water, soft drinks and liquor. They serve food also. They have the time and ingredients for these small dishes. In the early days tapas were served on small dishes placed as a cover over drinks. The tapas were small and sometimes they were free or sold for a small price. 1/2 lb beef, ground
1 lb veal, ground
1/2 lb pork, ground
3/4 cup breadcrumbs
5 garlic cloves, minced, divided
2 eggs
1/2 teaspoon nutmeg, ground
2 teaspoons salt
3/4 teaspoon pepper, freshly ground
flour, for dusting
3 tablespoons olive oil
1 medium onion, coarsely chopped
1 green pepper, cut in 1/4 inch strips
1 small tomatoes, skinned and coarsely chopped
1/2 cup dry white wine
3/4 cup chicken broth
salt
pepper, Freshly ground

Steps:

  • In a bowl, combine the beef, veal, and pork with bread crumbs, 4 cloves of garlic, the eggs, nutmeg, salt, and pepper.
  • Form into cocktail-size meatballs. Dust with flour.
  • Saute the meatballs in a casserole with olive oil until well browned on all sides.
  • Add onion, remaining clove of garlic, and green pepper.
  • Cook until onion is wilted.
  • Add the tomato, wine, broth, salt and pepper.
  • Cover and simmer for 45 minutes.

These classic Venezuelan Polvorosas Cookies are always a big hit. Easy to make, easier to eat! They’re absolutely the BEST!

Number Of Ingredients 7

1 cup ( 200 g) vegetable shortening ((at room temperature))
1 cup ( 200 g) granulated sugar
1/4 teaspooon salt
1 teaspoon (5 ml) pure vanilla extract
1/2 teaspoon cinnamon
2 cups (280 g) all- purpose flour
1/4 cup (30 g) powdered sugar for coating ((optional))

Steps:

  • Preheat oven to 350º F (180º C). Line cookie sheets with parchment paper. Set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment, mix shortening on medium speed until softened and creamy, about 1 -2 minutes. Add in sugar, salt, vanilla, and cinnamon; continue mixing for 2 – 3 minutes.
  • Reduce the mixer speed to low, add in flour slowly; mix just until combined.
  • Roll balls of dough (about 1 tablespoon of dough per cookie). Arrange the balls on a large baking sheet, spacing them 1/2 inch apart. Press fork into the tops to flatten them a little.
  • Bake for 18 - 20 minutes, or until very lightly browned on the sides. Let the cookies cool on the baking sheets for just 5 minutes. Then, transfer to a wire rack to cool, then once cookies are cool, sprinkle with powdered sugar, if desired. NOTE: Make sure your bake the cookies until they are JUST golden around the outside. The cookies might still look a little raw in the center, but once they cool, they will be perfect.

Dust ball in flour, and roll into a 6 1/2-inch circle (about 1/8-inch thick) on a lightly floured surface. Cook tortilla until puffed and golden brown spots appear, about 1 minute per side. As each tortilla cooks, shape and roll the next one. Wrap cooked tortillas in a towel to keep warm.
