FRIED YUCCA (CASSAVA) COSTA RICAN STYLE RECIPE - FOOD.COM

Fried Yucca (Cassava) Costa Rican Style Recipe - Food.com image

This is my favorite Saturday morning treat that my husband always makes for me. Its very easy and tastes way better than potato french fries.

Total Time 30 minutes

Prep Time 20 minutes

Cook Time 10 minutes

Yield 2 serving(s)

Number Of Ingredients 3

1 small yucca root (yuca) or 1 medium yucca root (yuca)
2 -3 tablespoons butter (1 knob)
salt, to taste

Steps:

  • Skin the yuca using a potato peeler or a knife.
  • Cut the yuca into 2-3 inch chunks and then cut those chunks in half.
  • Boil the yuca until it is just soft enough to poke with a fork. Don't over boil or let it sit in the hot water or it will become to soft and wont fry.
  • There is a very indigestible stringy part in the middle, be sure to take that out if its visible.
  • Cut the half chunks into smaller fry-shaped pieces.
  • Melt the butter in a frying pan, add the yuca and fry on medium or medium-low heat, turning occasionally until they are browned to your liking.
  • Add salt and dip in ketchup.

YUCCA FRIES WITH CHAMOY MAYO RECIPE | JUSTIN WARNER | FOOD ...

Yucca Fries with Chamoy Mayo Recipe | Justin Warner | Food ... image

At first I thought I'd use umeshiso paste to accompany this, but upon further research, I decided that chamoy would be better suited. This dish really benefits from the desiccating heat of an air fryer or convection oven.

Categories     side-dish

Total Time 55 minutes

Cook Time 20 minutes

Yield 2 to 4 servings

Number Of Ingredients 7

2 yucca roots, peeled and cut into 24 fat frites
Kosher salt
Nonstick cooking spray, for the yucca
1 cup mayonnaise
1/4 cup chamoy seasoning sauce
1 lemon, zested
Freshly ground black pepper

Steps:

  • Add the yucca to an electric pressure cooker/air fryer combo and sprinkle with salt. Pour in 1 cup water. Cover with the lid and bring to high pressure, then cook for 10 minutes. Release the pressure according to the manufacturer's directions and prepare the machine as directed for air-fryer cooking.
  • Spray the yucca with cooking spray. Sprinkle liberally with salt, then top with the air fryer lid and cook at 390 degrees F until the exterior is golden and crisp, about 15 minutes.
  • Meanwhile, combine the mayonnaise, chamoy, lemon zest and black pepper to taste. This is your dipping sauce.
  • Serve the fries with the chamoy mayo.

SOUTH AMERICAN YUCA FRIES (YUCA FRITA) RECIPE
Mar 01, 2011 · It's used in the same way potatoes are prepared: mashed, boiled, and fried, as in this yuca fries (yuca frita) recipe. There are two things to keep in mind when making yuca fries: First, the yuca is always cut into thick wedges as opposed to thinner French fries, which makes them crispy on the outside and soft but densely textured on the inside. And secondly, the yuca needs to be partially cooked before it is fried, or else the outside of the fries will burn while the inside remains raw.
