Crepes are a super fun french breakfast to make on the weekends. If you're running low on time and ingredients you can make crepes from pancake mix to make them even easier.

Ingredients

1 cup pancake mix
2 cups milk
1 egg
1 tsp vanilla

Steps:

Mix all your ingredients together in a large bowl and set aside.
Heat a frying pan on the stove over medium high heat. Once the pan is hot, melt some butter in the pan. Once melted, add about two tablespoons of batter into the pan.
Rotate the pan by moving your wrist in a circular motion so that the batter coats the entire bottom of the pan in one thin later.
Cook the crepe for about 1-2 minutes, until you can gently flip it over, and let it cook on the other side for a few more seconds before removing from the pan. This process goes quickly so keep a close eye on it.
Once your crepes are cooked, serve with strawberries, bananas, whipped cream, and nutella, or whatever toppings you'd like!
