Now is not the time to cut calories or skimp on salt. Go for ground chuck that is at least 80/20. If you can find a blend with ground brisket or short rib, all the better. The best burger comes with being liberal with kosher salt—it is beef's best friend. —James Schend, Pleasant Prairie, Wisconsin

1 pound ground beef (preferably 80% lean)
1 teaspoon canola oil
1 teaspoon kosher salt, divided
1/2 teaspoon coarsely ground pepper, divided
4 hamburger buns, split
Optional: Mayonnaise, sliced American cheese, sliced tomato, dill pickle slices, lettuce, ketchup and yellow mustard

Steps:

  • Place a 9-in. cast-iron skillet over medium heat. Meanwhile, gently shape beef into 4 balls, shaping just enough to keep together (do not compact). , Increase burner temperature to medium-high; add oil. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness; sprinkle each with 1/8 teaspoon salt and pepper. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers and sprinkle with additional 1/8 teaspoon salt and pepper. Cook until well browned and a thermometer reads at least 160°, 1 minute. Repeat with remaining beef., Serve burgers on buns with toppings as desired.

1½ Lbs. Ground Beef (80/20)
½  Tsp. Salt
¼  Tsp. Pepper
½  Tsp. Garlic Powder
½  Tsp. Onion Powder
1  Tbsp. Worcestershire Sauce
8  Slices Cheddar Cheese
4  Tbsp. Butter (softened)
4  Brioche Burger Buns
Parchment Paper squares & Burger Smasher
Special Sauce:
2  Tbsp. Mayonnaise
1  Tsp. Yellow Mustard
1  Tbsp. Ketchup
½  Tsp. Sweet Pickle Relish (plus ½ tsp. of the juice)
Iceberg Lettuce (shredded)
Tomato (sliced)
Red Onion (sliced thin)
Sliced Dill Pickles

Steps:

  • In a small bowl, mix the special sauce ingredients together and set aside.  In a separate small bowl, combine the salt, pepper, garlic powder and onion powder.  Then set the seasoning mixture aside.
  • Split open each burger bun and spread softened butter on the inside of both halves.  Place each half, buttered side down, on a griddle on medium heat and toast until light golden brown.  Then place on a platter and set aside.
  • Divide the ground beef into 8 portions (3 oz. each) and form into balls.  In a cast iron skillet on medium heat, add 1 – 2 balls of the ground beef.  Then lay a piece of parchment paper on top of each one and press with a burger smasher until the patties are thin.  Sprinkle with some of the seasoning mixture.  Then add about 1 tsp. of Worcestershire sauce in the bottom of the skillet around the patties and cook until browned.  Flip the patties over, sprinkle with a little more of the seasoning mixture and continue to cook until browned.  Then place a slice of cheese on top of each patty and transfer to a plate and cover.  Repeat with the remaining balls of ground beef.
  • Spread some special sauce mixture on each bottom bun.  Then place some dill pickles, and 2 of the patties.  Top with onions, tomatoes, lettuce, and the top of the yummy, toasted bun.  Get ready to enjoy the most delicious, juiciest Smash Burger ever!
