The Keto Coconut Macaroons Will Hit Your Sweet Spot image

With only 1g net carb per serving, this keto coconut macaroon recipe is the treat for you, Enjoy dessert, without risking your macros.

Yield 9 macaroons

Number Of Ingredients 7

1 1/2 cups unsweetened shredded coconut
5 Tbsp. birch xylitol
1 scoop Bulletproof Vanilla Collagen Protein
1/2 tsp. baking powder (aluminum-free)
1/2 tsp. pure almond extract
2 pastured egg whites
Optional: unsweetened dark chocolate baking chips

Steps:

  • Preheat oven to 325ºF.
  • Place all of the dry ingredients in a mixing bowl and stir well to evenly mix.
  • Add almond extract and egg whites and stir well to combine.
  • Use a large spoon to scoop nine equal servings and place them evenly spread apart on a parchment-lined (or silicone baking mat lined) baking sheet. If unlined, you will need to brush your baking sheet with oil to keep the macaroons from sticking.
  • Optional: Top each macaroon with a few unsweetened dark chocolate chips before placing in the oven.
  • Bake for approximately 15 minutes or until macaroons are lightly browned.
  • Using a spatula, remove from baking sheet and allow to cool before eating.

Yield 5-6 servings

Number Of Ingredients 10

4 whole eggs
4 egg yolks
2 tsp Vanilla Collagen Protein Powder
1 g vitamin C (ascorbic acid) or 10 drops apple cider vinegar to taste
7 tbsp grass-fed butter
7 tbsp coconut oil
3 2/3 tbsp Brain Octane Oil or MCT oil
5 1/2 tbsp xylitol or erythritol
1/4-1/2 cup of water or ice (start with a small amount and add as needed)
1/4-1/2 cup cocoa powder (optional)

Steps:

  • Blend everything but the water/ice in blender. Note: It takes a while to get the butter blended into perfect creaminess.
  • Add water or ice and blend some more until well blended. Ideally, you want a yogurt-like consistency for creamy ice cream, or you can add more water for a firmer, icier texture.
  • Pour the mixture into an ice cream maker and follow its instructions to make ice cream.
