- Preheat oven to 425 degrees F.
- Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.

- Preheat oven to 350 degrees.
- Steam broccoli (or cook in microwave) until limp.
- Remove brocooli from heat, and drain.
- Saute onion in butter and add to broccoli.
- Add all remaining ingredients; mix well.
- Pour mixture into casserole dish.
- To make the topping, combine 1/2 cup crushed Ritz crackers and 1 tablespoon melted butter.
- Spinkle on top of casserole.
- Bake for 20 to 25 minutes.

- Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.
