Chocolate Bread Pudding with Custard Sauce Recipe | EatingWell image

Rich chocolate filling and an orange-scented custard sauce take plain bread to new heights in this lovely combination of decadence and homey comfort.

Orange-Scented Custard Sauce, (recipe follows)
1 tablespoon canola oil
2 teaspoons butter
8 1-inch slices whole-wheat sandwich bread, crusts removed, cut in half on the diagonal
? cup unsweetened cocoa powder
Pinch of salt
2?½ cups low-fat milk
2 ounces good-quality bittersweet (not unsweetened) chocolate, chopped
2 large eggs
½ cup packed light brown sugar
1 teaspoon vanilla extract

Steps:

  • Make Orange-Scented Custard Sauce and refrigerate.
  • Preheat oven to 400 degrees F.
  • Heat oil and butter over low heat in a small saucepan just until butter melts. Brush both sides of the bread slices with butter mixture and place on a baking sheet. Bake until golden brown, 5 to 7 minutes per side.
  • Overlap toasted bread slices in an ungreased 9-inch square baking dish. Reduce oven temperature to 325 degrees .
  • Whisk cocoa and salt in a medium saucepan. Gradually whisk in milk. Bring to a bare simmer over low heat. Remove from heat, add chocolate and whisk until it melts.
  • Whisk eggs, brown sugar and vanilla in a medium bowl until blended. Gradually whisk hot chocolate mixture into egg mixture. Pour custard over bread in baking dish. Let stand for 15 minutes. Meanwhile, boil water for the water bath.
  • Set baking dish in a roasting pan and place in the oven. Add boiling water to the roasting pan to reach halfway up sides of baking dish. Bake pudding until just set, 20 to 25 minutes. (It should still jiggle slightly in the center.) Remove baking dish from roasting pan and cool on a wire rack for about 20 minutes. Serve warm with Orange-Scented Custard Sauce.

Blueberries are so yummy, especially in this dessert! Cook time includes time for makeing sauce. The sweet dessert known as Bread pudding (not be confused with bread and butter pudding) is rather more popular in the UK than in the US, but it is hardly unknown in America, especially in the south. Bread Pudding has been around a long time. It’s been around in England since the 13th century. It has its origins as a source of food for the poorer elements of society, and was in fact called “Poor Man’s Pudding”.

2 tablespoons butter or 2 tablespoons margarine
4 eggs, beaten
2 1/2 cups milk
3/4 cup sugar
2 tablespoons lemon juice
8 cups French bread cubes (1/2-inch)
2 cups fresh blueberries
1 teaspoon grated fresh lemon rind
2 eggs
2 tablespoons sugar
1 dash salt
1 cup milk, scalded
1/2 teaspoon vanilla extract
1/2 teaspoon grated fresh lemon rind

Steps:

  • Pudding: Melt butter in a 13x9x2-inch baking dish; set aside.
  • Combine next 4 ingredients in a large bowl; beat well.
  • Add bread cubes, and let stand 5 minutes.
  • Fold in blueberries and lemon rind; spoon into prepared dish.
  • Bake at 350* for 35 minutes or until lightly browned and puffed.
  • Serve warm with Custard Sauce.
  • Yield: 10 servings Custard Sauce: Combine eggs, sugar, and salt in top of a double boiler, beating well.
  • Gradually stir about 1/2 cup milk into egg mixture; add remaining milk, stirring constantly.
  • Bring water in bottom of double boiler to a boil.
  • Reduce heat to low; cook custard over hot water, stirring occasionally, about 15 minutes or until mixture thickens.
  • Cool slightly.
  • Add vanilla and lemon rind.
  • Yield: 1 1/3 cups.

I adapted this recipe from an old cooking magazine I had. Using cinnamon raisin bread from the Day Old Bread store makes this recipe less expensive and easier. I also increased the ingredients to fit a more common 9x13 pan while reducing the sugar. The custard sauce is great alone or mixed with leftover rice for a mock rice pudding.

If it does, it's ruined and you must start over. Gradually add milk while whisking until smooth. Cook over boiling water while whisking constantly.
