This dashi recipe is the base for countless Japanese dishes. This method requires just 30 minutes to soak the kombu, unlike some that call for overnight soaking.

Yield 4 Servings

Number Of Ingredients 2

2 6x5-inch pieces dried kombu
1½ ounces bonito flakes (about 3 packed cups)

Steps:

  • Combine kombu and 8 cups water in a large saucepan. Let sit until kombu softens, 25–35 minutes. Bring to a boil over medium heat. Immediately remove from heat; fish out kombu and discard.
  • Add a splash of water to pot to cool liquid slightly. Add bonito flakes and stir once to submerge them. Return to a gentle boil, reduce heat, and simmer gently, skimming off any foam, 5 minutes. Let steep off heat, 15 minutes.
  • Strain dashi through a fine-mesh sieve or cheesecloth-lined colander into a medium bowl; do not press on solids. Do Ahead: Dashi can be made 2 days ahead. Let cool; cover and chill.

300g sushi rice
200ml dashi (optional)
1 tbsp mirin
pickles , nori, katsuobushi flakes (see tip below), sliced spring onions, to serve (optional)

Steps:

  • Rinsing and soaking your rice is key to achieving the perfect texture. Measure the rice into a bowl, cover with cold water, then use your fingers to massage the grains of rice – the water will become cloudy. Drain and rinse again with fresh water. Repeat five more times until the water stays clear.
  • Tip the rinsed rice into a saucepan with 400ml water, or 200ml dashi and 200ml water, bring to the boil, then turn down the heat to a low simmer, cover with a tight-fitting lid with a steam hole and cook for 15 mins. Remove from the heat and leave to sit for another 15 mins, then stir through the mirin. Remove the lid and give it a good stir. Serve with any or all of the optional toppings.
