The Easiest and Best Caramel Corn I've Ever Made - Food.com image

Oh LORD, have mercy! LOL! This stuff is the kind-of snack you sit down in front of the tv with and you look down and it's all gone! The best part about this recipe is (other than the end product) the fact no candy thermometer is necessary.

Cook Time 1 hours

Yield 1 1/2 gallon bag

Number Of Ingredients 7

2/3 cup unpopped popcorn
2 tablespoons oil (for popping)
1 cup butter
2 cups brown sugar
1 teaspoon salt
1/2 cup corn syrup
1 teaspoon baking soda

Steps:

  • Preheat the oven to 200°.
  • Spray your largest cookie sheets.
  • Pop the popcorn in the oil and set aside. I do this in two batches. Place in a very large bowl. (Plastic bowls work really well because the caramel won't stick; you could also spray the bowl with a bit of Pam).
  • Over medium heat in a heavy saucepan, melt butter and stir in brown sugar, salt and syrup. Bring to a rolling boil.
  • When it starts to boil, boil a full 5 minutes stirring constantly with a wooden spoon. (I used a plastic spatula and ended up sacrificing it)
  • Remove from the heat and add the soda. Pour caramel directly on the popcorn and stir to coat completely.
  • Pour popcorn onto the sheets and bake for 1 hour, stirring every 15-20 minutes. Allow to cool and break into pieces. Store in zip-top bags.

They're cakey and perfectly sweet with just the right amount of cornmeal. Some of the secrets to making great corn muffins like these are found in restaurant founder Dave Anderson's cookbook. His recipe for corn muffins includes a small box of yellow cake mix and the addition of stone ground cornmeal. However, I found that the cake mix made the muffins taste too much like yellow cake, so I opted for a completely scratch recipe with elements borrowed from my clone recipe for Duncan Hines Yellow Cake Mix. And since stone ground cornmeal is difficult to find, we can run regular cornmeal through a food processor for 5 minutes to pulverize many of the granules to powder. After baking 120 muffins over several days and making a few other adjustments to the cookbook recipe, I can now share with you this original Top Secret Recipe that will produce a dozen corn muffins that taste just like the restaurant version.   • In a thin and shallow 3 1/2-quart pot, heat the oil over high heat. Put 2 kernels of popcorn into the pan, cover, and wait to hear them both pop. Remove the pan from the heat, take out the 2 popped kernels, add in the remaining kernels, cover, and let sit for 1 minute.Put the pot back over the stove on high heat. Within a few minutes, the popcorn should start popping. Give the pan a good shake every now and then to ensure even heating. Once the popping slows down to nearly a stop, remove the pan from the heat and let it sit for 1 more minute to give any stubborn kernels a chance to pop.
