Hot dogs, burgers, fries, and more taste better when served with this homemade catsup recipe. Make the kitchen condiment when tomatoes are in season, then freeze for up to 10 months.

8 pounds tomatoes (24 medium)
½ cup chopped onion (1 medium)
¼ teaspoon ground red pepper
1 cup sugar
1 cup white vinegar
1?½ inches stick cinnamon, broken
1?½ teaspoons whole cloves
1 teaspoon celery seed

Steps:

  • Core and quarter tomatoes; drain. In an 8- or 10-quart kettle combine tomatoes, onion, and red pepper. Bring to boiling; cook 15 minutes, stirring often. Press through food mill or sieve. Discard seeds and skins. Return to kettle; add sugar. Bring to boiling; reduce heat. Simmer 1-1/2 to 2 hours or until reduced by half*, stirring occasionally.
  • In a saucepan bring vinegar, cinnamon, cloves, and celery seed to boiling. Remove from heat.
  • Strain vinegar mixture into tomato mixture; discard spices. Add 1 tablespoon salt. Simmer for 30 minutes or to desired consistency, stirring often.
  • Ladle hot catsup into hot, clean half-pint jars, leaving a 1/8-inch headspace. Wipe jar rims and adjust lids. Process in a boiling-water canner for 15 minutes (start timing when water returns to boil).

This ketchup does come close to those name brands in terms of taste, texture and color. I've never had a tomato paste-based ketchup that I liked, so I decided to cook down crushed tomatoes instead. By using the slow cooker, we take most of the labor out of the process.

2 (28 ounce) cans peeled ground tomatoes
½ cup water, divided
? cup white sugar
¾ cup distilled white vinegar
1 teaspoon onion powder
½ teaspoon garlic powder
1?¾ teaspoons salt
? teaspoon celery salt
? teaspoon mustard powder
¼ teaspoon finely ground black pepper
1 whole clove

Steps:

  • Pour ground tomatoes into slow cooker. Swirl 1/4 cup water in each emptied can and pour into slow cooker. Add sugar, vinegar, onion powder, garlic powder, salt, celery salt, mustard powder, black pepper, cayenne pepper, and whole clove; whisk to combine.
  • Cook on high, uncovered, until mixture is reduced by half and very thick, 10 to 12 hours. Stir every hour or so.
  • Smooth the texture of the ketchup using an immersion blender, about 20 seconds.
  • Ladle the ketchup into a fine strainer and press mixture with the back of a ladle to strain out any skins and seeds.
  • Transfer the strained ketchup to a bowl. Cool completely before tasting to adjust salt, black pepper, or cayenne pepper.

Ketchup is very simple to make and is so much more flavorful than anything you can buy at the store. We don’t like it to be too sweet and like to add only 3 to 4 tablespoons of sugar to the pot, but if you prefer, add a little more to make the ketchup sweeter. The sweetness of tomatoes can range, too, so it really is best to taste the ketchup and add the sugar to taste. You can also play around with flavors, this version has a kick of spice from crushed red pepper flakes, but you could add fresh jalapeño, chipotle or hot sauce to transform it into spicy ketchup. Other spices are nice, too — try curry powder or garam masala for an Indian-spiced version.

  • Heat a 4-quart sauce pot over medium high heat. Add olive oil and onions, sauté until translucent, about 8 minutes. Add garlic and sauté until fragrant, about 2 minutes. Add tomatoes, tomato paste, sugar, molasses and cider vinegar. Bring to a slow boil, lower to a simmer and using a spoon crush the whole tomatoes. Add remaining ingredients and continue to simmer, uncovered for 45–55 minutes, stirring occasionally, until very thick. Make sure to keep an eye on it and stir it to keep it from scorching. Use an immersion blender to puree the ketchup. If you don't have an immersion blender, transfer it carefully to a blender or food processor and process until smooth. (Optional: Strain through a fine mesh strainer.) Chill in refrigerator for at least 2 hours. The ketchup will continue to develop flavor and thicken. Enjoy on everything! Notes:1. Keep refrigerated in an airtight container up to a month.2.
