THAI BEEF STIR-FRY RECIPE: HOW TO MAKE IT
A distinctive peanut sauce complements this colorful combination of tender sirloin strips, cauliflower, carrots, broccoli and mushrooms. I like to dish it up over spaghetti, but you could use fried noodles instead. —Janice Fehr, Austin, Manitoba

- In a small bowl, combine the first 8 ingredients until smooth; set aside. In a large cast-iron skillet or wok, stir-fry beef in 3 tablespoons oil until meat is no longer pink. Remove and keep warm., In the same skillet, stir-fry broccoli, cauliflower and carrots in remaining oil for 5 minutes. Add mushrooms; stir-fry until the vegetables are crisp-tender, 3-5 minutes., Stir broth mixture and add to the pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; add beef and peanut butter. Cook and stir over medium heat until peanut butter is blended. Serve with spaghetti. Sprinkle with peanuts.
Freeze option: Do not cook spaghetti. Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Cook spaghetti according to package directions. Place beef mixture in a large skillet and heat through, stirring occasionally; add a little broth if necessary. Serve with spaghetti and sprinkle with peanuts.

I put a healthier spin on Lomo Saltado (Peruvian Beef Stir Fry) one of my favorite Peruvian dishes!

Steps:
- Preheat the oven to 400°F.
- Lightly coat a baking sheet with cooking spray.
- Cut the potato lengthwise into 1/3-inch thick slices; cut each slice into 1/3-inch fries. Place on the baking sheet and toss with oil to evenly coat. Season with garlic powder, salt and pepper. Place on a single layer onto the greased baking sheet.
- Bake uncovered on the lower third of the oven for about 25 minutes or until tender crisp and golden.
- Meanwhile, season meat with salt, pepper and cumin.
- Heat a large wok over high heat. When hot add the oil and the steak, cook about 2 minutes, until browned on both sides. Add the onions, bell pepper, jalapeno and garlic and cook 2 minutes. Add the tomato, soy sauce and vinegar and cook 1 more minute. Season with more salt as needed, remove from heat and finish with cilantro.
- Serve immediately with french fries and divide evenly between 2 plates.

- Place the broccoli into a heatproof bowl with a pinch of sea salt, then cover with boiling water, leave for 10 minutes, then drain.
- Peel and finely slice the onion and garlic, and peel and finely chop the ginger. Finely slice the chilli and cut the lime into wedges.
- Pound the coriander seeds in a pestle and mortar with a pinch of salt and black pepper.
- Slice the steaks into finger-sized strips, then sprinkle over the spice mixture and toss to coat.
- Place a wok or large frying pan on a hight heat. Drizzle in 1 teaspoon of olive oil, add the onions, garlic and ginger, then fry for 2 minutes.
- Drop in the seasoned beef and fry for 2 minutes, then add the broccoli and fry for a further 2 minutes, stirring all the time.
- Pour in the soy sauce and 1 teaspoon of sesame oil, then toss to coat.
- Delicious served with egg noodles or steamed rice, and with some fresh chilli scattered on top and a good squeeze of lime juice.

- Remove the beef from the skillet and set aside. Allow the liquid in the pan to reduce until thickened, about 4 minutes. Add the garlic and scallions and cook 1 minute more.
