Preheat oven to 400F.  Thinly slice lotus root with food processor or mandolin.  Submerge in a bowl of water and let it sit for about 30 minutes or longer.

Yield 2 Servings

Number Of Ingredients 4

2 pieces of lotus root
Cooking spray
1 teaspoon cumin
¼ teaspoon kosher salt

Steps:

  • Preheat oven to 400F.  Thinly slice lotus root with food processor or mandolin.  Submerge in a bowl of water and let it sit for about 30 minutes or longer.  Drain water and pat try with a towel. Lay out on baking sheet and spray with cooking spray to evenly coat.  Sprinkle with cumin and salt and bake for about 20 minutes.  They are ready when golden brown and crisp, but not burnt. If desired you could fry these instead in a frying pan, all you need is a thin layer of oil, but it will take more time.

  • To Prep Combine the water and rice vinegar in to a large bowl. Clean the lotus root and proceed to cut it in to thin slices before placing them in to the vinegar mixture. This will help stop any discoloration from forming on the slices. Rinse the chips and drain them well. Pat off any of the excess water using a paper towel. To Cook Heat up a pan of oil to about 180 degrees Celsius and cook the lotus root in batches. Fry the chips until they become crispy and golden. Transfer the cooked chips on to paper towels to drain off the excess oil and to cool. Season the chips with salt and serve!
