6 boneless skinless chicken breast halves (4 ounces each)
1-1/2 cups hot water
1 package (6.2 ounces) fast-cooking long grain and wild rice mix
1 can (14 ounces) whole-berry cranberry sauce
1 tablespoon lemon juice
1 tablespoon reduced-sodium soy sauce
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. Place chicken in a 13x9-in. baking dish coated with cooking spray. In a bowl, mix hot water, rice mix and contents of seasoning packet; pour around chicken. , In a small bowl, mix remaining ingredients; pour over chicken. Bake, covered, until a thermometer inserted in chicken reads 165°, 35-45 minutes.

1 tablespoon lemon juice
1 tablespoon reduced sodium soy sauce
1 tablespoon Worcestershire sauce

Steps:

  • Place the chicken into a 13x9 inch baking dish coated with cooking spray.
  • In a small bowl, combine the water, and rice mix with the contents of seasoning packet, and pour around chicken.
  • In a small bowl, combine the cranberry sauce, lemon juice, soy sauce, and worcestershire sauce, and pour over the chicken.
  • Cover, and bake at 350 degrees for 40-50 minutes or until a meat thermometer reaches 170 degrees.
