Crispy cinnamon-sugar fried bread confections!

1 ½ cups milk
1 teaspoon salt
2 tablespoons white sugar
⅜ cup shortening
2 tablespoons active dry yeast
4 cups all-purpose flour
1 quart oil for frying
3 tablespoons ground cinnamon
6 tablespoons white sugar

Steps:

  • In small saucepan over medium heat, combine milk, salt, 2 tablespoons sugar and shortening. Heat until shortening melts and sugar dissolves. Remove from heat and let cool to lukewarm, 110 degrees F (43 degrees C). Sprinkle in yeast and let sit until foamy.
  • Transfer mixture to large bowl, and stir in flour to make a dough. Knead until smooth, cover and let rise 30 minutes.
  • In a large heavy skillet or deep fryer, heat 1 inch of oil to 375 degrees F (190 degrees C).
  • Roll out 1 to 2 inch balls of dough into thin sheets. Fry sheets 1 to 2 minutes on a side, until puffed and golden. Drain on paper towels.
  • Combine cinnamon and 6 tablespoons sugar. Sprinkle over warm pastries. Serve.

Grandmas all over the country have long used scraps of unused pie crust dough to make larger versions of these sweet treats. Our miniature version is just the right size--and much easier to assemble!

1/2 cup sugar
1 teaspoon ground cinnamon
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/4 cup butter, melted

Steps:

  • Heat oven to 375°F. Place two 12-inch squares waxed paper on work surface.
  • In small bowl, mix sugar and cinnamon.
  • On work surface, unroll 1 crust. Brush with butter; sprinkle with half of the cinnamon sugar.
  • Top with second crust. Brush top of second crust with butter, sprinkle with remaining cinnamon sugar; roll up.
  • Cut the roll into 12 (1-inch) slices, then press down slightly, and roll individually between the sheets of waxed paper to 1/4-inch slices, replacing waxed paper as needed. Place on ungreased cookie sheets.
  • Bake 20 to 22 minutes or until golden brown and crisp. Cool on cooling rack.

  • In a bowl, dissolve yeast and 3/4 teaspoon sugar in 3 tablespoons warm water. Add remaining 1/2 cup sugar, remaining 1-1/3 cups warm water, oil, egg, salt and 2 cups flour; mix well. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Shape into 20 balls. Roll each into an 8-in. rope; tie into a loose knot. Place on a greased baking sheet; cover and refrigerate overnight. Allow rolls to sit at room temperature for 45 minutes before baking. , Bake at 375° until lightly browned, about 12-15 minutes. Brush with butter if desired. Remove to wire racks to cool.

Cover and let rise in a warm place until doubled, about 1 hour. , Preheat oven to 375°. Beat remaining egg. Make a depression in the center of each roll; brush with egg. Fill each depression with 1 tablespoon pie filling. Bake for 15-18 minutes or until golden brown. Cool on a wire rack. Combine confectioners’ sugar, vanilla and milk; drizzle over rolls. Sprinkle with almonds.
