1 1/2 lbs fingerling potatoes
1 1/4 teaspoons salt
2 tablespoons seasoned rice vinegar
2 tablespoons olive oil
1 teaspoon sesame oil
1 small red bell pepper, thinly sliced
2 green onions, thinly sliced
1/2 jalapeno pepper, seeded and minced
1/2 cup cilantro leaf, loosed packed and coarsely chopped

Steps:

  • Bring potatoes to a boil over high heat with 1 tsp salt added to water.
  • Reduce heat to low; cover and simmer 10 to 12 minutes, or until potatoes are fork-tender. Drain.
  • In a serving bowl, whisk vinegar, olive oil, sesame oil and remaining ¼ teaspoons salt.
  • Stir in red pepper, green onion, jalapeño, and cilantro.
  • When potatoes are cool enough to handle, cut each lengthwise in half.
  • Add potatoes to bowl with dressing and toss to coat.
  • Serve warm or at room temperature.

I had Japanese potato salad for the first time a few weeks back at a Zaar luncheon held at a Japanese Tea Garden. I liked it so much that I had to come home and look it up online. I learned that although potatoes weren't a part of traditional Japanese cuisine, potato salad has since become a daily fixture in Japanese lunch boxes. Japanese potato salad is creamy and non-acidic, no vinegar and no pickles here. This recipe is from justhungry.com, tweaked a bit by me to resemble what I had at the Tea Garden. Posted for Zaar World Tour. Time doesn't include cooling time. By the way, we enjoyed lunch so much we forgot to check out the garden :lol:

  • Note regarding mayonnaise: The ideal mayo to use is a Japanese one. Next best would be to make your own, using a flavor-neutral vegetable oil such as canola or safflower, not extra virgin olive oil. ("Extra Light" olive oil is fine.) Lacking access to Japanese mayonnaise or the time to make your own though, any commercial mayo will do as long as it's not too heavy on the vinegar flavor. Salad cream such as Miracle Whip should not be used however.

  • "1. Combine all ingredients listed under potatoes in a heavy-bottomed pot and bring to a gentle simmer. Once it reaches a simmer, turn down the heat until there are just very small bubbles in the pot and cook until the potatoes are tender. Cool the potatoes in their cooking liquid in a shallow pan. Once cool, cut the potatoes in half lengthwise. The cooking liquid can be used again for the same purpose and so should be reserved. 2. For the dressing: Create an Asian flavor base from miso, vinegar, mirin, and sesame oil and add this to your vinaigrette. Taste the dressing and adjust the seasoning as needed 3. Mix the potatoes with the carrots and snap peas, and dress with the Asian vinaigrette. Season to taste and garnish with your favorite Asian garnishes as listed in the ingredients Pickled Mustard Seeds 1. In a small heavy sauce pan cover the mustard seeds with water and bring to a boil. Drain the water and rinse the mustard seeds. Repeat the blanching a second time. 2. Drain the water, rinse the mustard seeds and add the vinegar, sugar, salt, soy sauce, and spices in a small heavy saucepan with the blanched mustard seeds and bring to a gentle simmer over low heat. Cook, stirring often, until the mustard seeds are plump and tender, about 15 to 20 minutes. The liquid will be nearly absorbed, but the seeds will remain moist in very little thick viscous broth. Cool the seeds in their liquid and refrigerate in a covered container. It will keep for months."

  • For the potato salad, place potatoes in a large pot and cover with water. Season water generously with salt. Place over high heat and bring to the boil. Simmer for 25 minutes or until easily pierced with a knife. While the potatoes are cooking, place the cucumber and carrot in a bowl and sprinkle with ½ teaspoon of salt. Mix well and set aside for 10 minutes. Then gather the vegetables with your hands and gently squeeze and discard any excess liquid. Place vegetables in a large bowl. Drain the cooked potatoes and allow them to cool slightly. Use a small knife to peel off and discard the potato skins (a tea towel will help with holding the warm potatoes). Cut the peeled potato into rough chunks. Add the potato to the bowl with the cucumber and carrot. Add the eggs, mayonnaise, vinegar, mustard and spring onion. Mix until well combined (the potato will resemble part mash, part potato salad). Season with salt and sprinkle with furikake if using. ? *NOTES: Japanese furikake is a seasoning for cooked rice. It typically contains a mix of dried fish, seaweed, sesame seeds and other dried ingredients. Find it an an Asian grocery store or order it online.
