4 fresh anchovies, in white wine vinegar
4 salted anchovies

Steps:

  • Lightly toast the slices of bread and place one fresh anchovy in white wine vinegar and one salted anchovy on top of each slice.
  • Serve with a sprinkle of parsley.

With just a few high-quality ingredients and less than 10 minutes, you can make this appetizer. “Delicious” doesn’t even begin to describe this: If I’m starting with this, then I know the rest of the meal will knock your socks off.

1 large baguette (12 inches), halved crosswise, then lengthwise
1 garlic clove 
4 tablespoons extra-virgin olive oil 
5 tablespoons high-quality, unsalted grass-fed butter, at room temperature 
24 olive oil-packed anchovies, cut in half crosswise on a bias, preferably Cetara 
Flaky sea salt, such as Maldon, for serving 
2 tablespoons chopped Italian parsley 

Steps:

  • Preheat the broiler. Put the halved baguette on a baking sheet. Rub the cut sides with the garlic clove, then drizzle with the olive oil and spread the butter on evenly.
  • Place the cut anchovies evenly on the bread and broil until brown and bubbly, about 4 minutes. Cut into 12 even pieces, crunch some salt over the top and sprinkle with chopped parsley.

  • "With a mortar and pestle, mash anchovies, garlic, mustard, onions, and capers. Turn into a mixing bowl and vigorously beat in olive oil (or combine these ingredients in food processor or blender and blend until anchovies are mashed). Slice loaf of Italian bread lengthwise. Spread anchovy mixture on top of one slice of bread. Lay slices of red pepper over anchovy mixture. Sprinkle with parmesan cheese. Top with second slice of bread. Wrap in foil, place in preheated 400 oven for 10 minutes. Slice and serve. This is a no-recipe recipe, a recipe without an ingredients list or steps. It invites you to improvise in the kitchen. If you’re up for a delicious, slightly sporty breakfast, you might consider making some anchovy butter tonight. Take a stick of unsalted butter, and let it soften on the counter while you assemble the other ingredients: a tin of anchovies, some garlic cloves, a shake or two of smoked or regular paprika, a wee splash of lemon juice and maybe, but probably not, some salt. Rinse and mince the little fish, mince the garlic, and fork everything together into the butter to taste. Then, come morning, you can slather toast with the result and serve it with soft scrambled eggs or, better yet, soft-boiled eggs, a breakfast I once had in London at a hotel and restaurant the chef Fergus Henderson was running in Leicester Square. Make sure you spread the butter “wall to wall.” That is a vernacular phrase of the chef Gabrielle Hamilton. It means to cover the entire surface of the bread from edge to edge — an important step in buttering, one that is too often shirked.
