My husband loves SkyLine chili, and this slow cooker recipe is pretty darn close! I usually double the recipe so we have lots of leftovers.

1 1/2 lbs lean ground beef
1 small onion, chopped
1 (29 ounce) can tomato sauce
1 (14 1/2 ounce) can peeled whole tomatoes
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 tablespoons chili powder
1 tablespoon white vinegar
1 garlic clove
3 bay leaves
spaghetti
grated cheddar cheese

Steps:

  • Brown meat and onions (about 3-5 minutes) and drain grease.
  • Combine remaining ingredients and mix in with beef and onions.
  • Place into slow cooker and cook for 4-5 hours on High.
  • Remove bay leaves and garlic clove before serving.
  • Serve on a bed of spaghetti and top with grated cheddar cheese.

1/2 pound Italian sausage
1/2 pound ground pork
1 medium yellow onion (chopped)
1/2 T butter
1 tsp olive oil
2 cloves garlic (minced)
1 teaspoon Italian seasoning
2 jars 25 oz. each, Marinara or Tomato Sauce or 6 cups homemade sauce
Salt & Pepper to taste
Pinch of sugar
6-10 ounces dry packaged cheese filled tortellini*
red wine (beef broth or water to taste)
ricotta cheese (optional)
Sprig of basil (for garnish)
Parmesan cheese (for garnish)

Steps:

  • In a 12” skillet over medium heat, melt butter with olive oil and saute the onion until transparent and starting to brown. Add sausage and brown, stirring and breaking apart with wooden spoon. Add garlic and cook for 1-2 minutes.
  • While the meat is cooking, pour the marinara sauce into the slow cooker. Add sugar and seasonings. Stir in the cooked sausage with onions and garlic. Add 1/2 cup liquid of choice. Set the slow cooker on high, and cook for 3-4 hours or low for 5-7 hours.
  • About 30-45 minutes before you are ready to serve, pour the dry packaged tortellini into the soup. Use 4-6 oz. for soup, 6-8 oz. for a thicker stew, and 8-10 oz. for a pasta dish more like baked pasta than soup.
  • Turn the slow cooker up to high (or leave it if it was already on high) and let the tortellini cook for 15-20 minutes. Add additional liquid as desired. Turn slow cooker back down and serve within 30 minutes. Refrigerate or freeze leftovers.

  • Scatter the onions and carrot over the base of the pot of a slow cooker. In a small bowl, stir together both kinds of mustard, rosemary, garlic, salt and pepper. Rub mixture all over the beef, then put the meat on top of the vegetables in the slow cooker. Pour the stock around the beef. Cover slow cooker with lid and cook on low for 3hr for medium meat, 3hr30min for well done meat (see GH Tip).

    Lift the joint on to a board or serving plate and cover with tin foil, allow to rest for 10min.

    Melt the butter in a saucepan and stir in the flour. Cook for 3-4min, stirring frequently until bubbling and golden. Strain cooking liquid into jug and discard the vegetables. Add strained liquid to the butter and flour mixture a little at a time, stirring well after each addition. Once 600ml of liquid has been added, bring to the boil and simmer for 3-5min until thickened, whisking constantly. Add more liquid if a thinner gravy is desired. Pour into a serving jug. 

    Carve the beef into slices and serve with the gravy and your favourite roast dinner trimmings.
