Number Of Ingredients 26

¾ teaspoon cinnamon
1½ teaspoons turmeric
1½ teaspoons cardamom
¾ teaspoon paprika
1½ teaspoons black pepper
? teaspoon ground cloves
¾ teaspoon ground chili powder
1½ teaspoons ground coriander
1½ teaspoons curry powder
3 teaspoons minced garlic
4½ teaspoons sumac
3 teaspoons kosher salt
2 tablespoons olive oil
1 tablespoon Jamie Geller Jerusalem Mixed Grill or recipe above
1 onion, sliced
¼ pound kashered chicken hearts*
½ pound chicken thighs, chopped
¼ pound kashered chicken liver*
Tahini, for garnish
Parsley, for garnish
4 cups flour
2 ¼ teaspoons yeast
1 tablespoon brown sugar
1 teaspoon salt
1 ½ cups warm water
1 tablespoon oil

Steps:

  • Pita Preheat oven to 500°F / 260°C.1. In a bowl, add flour, yeast, brown sugar and salt. Mix. 2. Make a well in the middle of the flour and add warm water and oil. Mix until all the ingredients are combined well. 3. Use your hands to form the dough and knead for 5 minutes. 4. Place the dough in a clean bowl and cover in plastic wrap or a towel.   Leave to rise in a warm area for 1 hour or until doubled in size. 5. Separate dough into 8 equal pieces and form each piece into a ball.  Flatten out with a rolling pin into a circle. Place on a sheet pan in hot oven.  Bake for 5-7 mins (until lightly golden). Mixed Grill 1. In a jar or bowl, mix together the cinnamon, turmeric, cardamom, paprika, black pepper, ground cloves, ground chili powder, ground coriander, curry powder, minced garlic, sumac and kosher salt.   2. Add olive oil to a frying pan on medium heat.  Add 1 tablespoon of the pre-mixed spices and stir.  Add onion, chicken hearts and chicken thighs and stir. Make sure the chicken is cooked thoroughly, which will take about 10 minutes. 3. Add the koshered chicken livers and cook for a few more minutes, until hot. (Koshered chicken livers are pre-cooked).   4. Slice off the top of the pita and open the pocket.  Spread a spoonful of tahini inside followed by plenty of mixed grill and topped with parsley. 1 packet active dry yeast
½ cup water
1 teaspoon sugar
3 cups flour
1 tablespoon black caraway seeds (optional)
1 teaspoon salt
1 cup water
4 tablespoons olive oil

Steps:

  • 1. Combine yeast and sugar and add warm water. set aside in a warm place to allow the yeast to foam and activate.  2. Mix flour, caraway seeds (optional) and salt in bowl, add the yeast mixture, and then the additional water, and mix until combined.  3. Pour about ¼ cup flour onto surface, knead dough until no longer sticky.  4.Pour oil into bowl.  5. Place dough in the bowl and coat with oil.  6. Cover and let rise until doubled in size, about 2 hours.  7. Knead dough on a lightly floured surface.  8. Preheat oven to 500 °F.  9. Place baking trays in oven to get hot. Use at least two trays so you can bake all pitas at once. it is important for the trays to be very hot.  10. Roll dough into a rope and pull off about 10-12 pieces. Form into balls.  11. Place on a lightly floured surface, covered for ten minutes.  12. Roll out balls using a rolling pin, on lightly floured surface.  13. Take out hot trays. Spray with oil.  14. Place rolled out dough onto trays and place on bottom of oven.  15. Bake for 3 minutes. open oven, turn over pita, and bake for another three minutes

  • 1. Preheat oven to 250°F. 2. Lay out 4 pitas on a work surface. Spread 1 tablespoon hummus and 1 tablespoon matbucha on each pita. Top with 1 slice havarti, 1 slice Swiss, 2 slices onion, 2 slices tomato, and 2 basil leaves. Place 1 slice mozzarella on top. Cover with a second pita. 3. Spray 2 grill pans with cooking spray and place over medium heat. When pans are hot, place panini in the pans and weigh each down with a heavy pot lid or cast iron pan.
