TRADITIONAL JAPANESE RECIPE: Zaru Soba is cold buckwheat noodles with dipping sauce. During an unbearable hot and humid summer, classic cold Japanese noodle, Zaru Soba (????) is the perfect dish in Japan. Soba (?? or ??) is the Japanese name for buckwheat. It usually refers to thin noodles made from buckwheat flour, or a combination of buckwheat and wheat flours (Nagano soba). They contrast to thick wheat noodles, called udon. Soba noodles are served either chilled with a dipping sauce, or in hot broth as a noodle soup. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

4 portions Dried Soba Noodles
1.2 cups cold Water
1 cup Men-Tsuyu
2 Green Onions
Shredded Roasted Seaweed
Wasabi

Steps:

  • 01 - In rolling boiling water in a big pot, add the dried Soba Noodles and stir. 02 - After it comes to a boil, cook for 3-4 minutes ( follow the instructions on the package ). 03 - Strain the Soba Noodles and cool under running water a bit and right after chill in ice water for a couple of minutes. Then strain again. 04 - Mix Men-Tsuyu and cold water, and divide into small dipping bowls. 05 - Place Soba on plates and top with shredded Roasted Seaweed. Serve with Men-tsuyu, Green Onions, and Wasabi on the side.
