A Sunday dinner staple that you can now enjoy even if you're vegan. With only five ingredients and that characteristic puff, these modified Yorkies are sure to be a hit

225g self-raising flour
½ tsp baking powder
300ml unsweetened soya milk
100ml warm water
8 tsp vegetable oil

Steps:

  • Add all the ingredients except the oil to a food processor with a pinch of salt and blitz until smooth. Transfer the batter to a jug, cover with cling film and leave to rest in the fridge for 1 hr.
  • Heat oven to 220C/200C fan/gas 7. Spoon a tsp of oil into eight holes of a muffin tin and place in the oven for 5 mins to get really hot. Remove the tin from the oven and carefully pour the batter into the hot oil. Return to the oven and bake for 25-30 mins until risen and deep golden brown.

vegetable oil

100 g

plain flour

100 g

chickpea flour

3 tsp.

baking powder

1/4 tsp.

turmeric

1/2 tsp.

fine sea salt

1 tsp.

apple cider vinegar

12 tsp.

aquafaba (chickpea water)

450 mL

soya milk

Steps:

  • Pre-heat the oven to 220°C (200°C Fan). Once hot, add 1tsp of the vegetable oil into each hole of a 12-hole non-stick muffin tray and place it into the oven for 20 minutes. Meanwhile, sift the plain flour, chickpea flour and baking powder, salt, and turmeric in a large bowl. In a medium bowl whisk the vinegar, aquafaba, and soya milk until combined and smooth. Next gradually add the wet ingredients to the dry, whisking as you go until combined, and you have a smooth batter. Transfer to a jug and set aside until the muffin tray and oil are hot enough. Carefully remove the muffin tray from the oven and work as quickly as you can fill the muffin holes up to ¾ way. The oil will sizzle, don’t be alarmed. Place them back into the oven and close the door as quickly as you can. The key to great Yorkies is to have a piping hot oven.  Bake for 15 minutes then turn down the oven 190°C (170°C Fan), and bake for 15-20 minutes puffed up. Make sure you do not open the oven at all during the bake as they will work.

  • Bake for 30 minutes. The puddings will rise, then fall, possibly making a well on the top. Turn down the heat to 400 degrees and bake about 10 minutes more, or until the tops are deep golden brown and the insides are cooked through and just dry (peer into the well to check; the inside should be matte, not shiny). Remove from the oven, let the puddings rest for about 3 minutes, then use a spoon or spatula to lift from the tin and serve immediately.

The Yorkshire pudding mix can be made two or three days before and kept in the fridge. Be sure to make the baking tray piping hot, says Mr. Ramsay, so that when the cold batter hits, the puddings will puff up. Once ladled into the tray, sprinkle with coarse salt, and then once in the oven, leave the door closed. "Treat it like a soufflé." Try this with a roast and gravy but they are so good that you can have them with anything! I included the minimum amount of resting time in the prep time and the time for the stove to heat up before cooking in the cooking time. Enjoy!
