This simple ramen with wood ear mushrooms only takes a couple of minutes to make. It is quite nutritious and a great fit for a vegan diet.

1 cup fresh wood ear mushrooms
1 tbsp oil
1 medium-sized onion
1 cup ramen
2 tbsp soy sauce
1 tbsp mirin (or regular vinegar)

Steps:

  • Heat water for ramen (the package usually has instructions).
  • Heat the oil on a frying pan. Chop the onion and add it to the pan.
  • Chop the mushrooms into small pieces. When the onion becomes translucent, add the mushrooms.
  • Fry for about 5 minutes. Add water if necessary.
  • Cook the ramen, which will usually take 1 minute.
  • Add the soy sauce and mirin.
  • Put the ramen into bowls and put the mushrooms on the top.

Healthy Chinese style snow fungus soup with red dates and wolfberries

Number Of Ingredients 5

dried snow fungus ( ,25g (around 3/4 head, remove the yellow end)
9 red dates
1 tbsp. wolfberries ( ,??)
50 g to 80g rock sugar
1.5 L water ( ,fore high pressure cooker or 2L for regular cooker)

Steps:

  • Soak snow fungus firstly until soft. Then move the yellow end. Hand shred into small chunks.
  • Prepare a high pressure cooker, place the sow fungus pieces in, add red dates and rock sugar. then add enough clean water. For high pressure cooker, press soup. For regular pot, continue cooking at least 40 minutes after the the liquid boils.
  • Add wolfberries and continue cook for 5 to 10 minutes.
  • Serve either warm or chilled.
