I got this from a friend that lived in Mexico. Mostachon means macaroon in Spanish. This has a Meringue base with a whipped topping. It sounds kind of weird but it is awesome. My original recipe is so worn I had to post here for safe keeping.

Number Of Ingredients 12

1 cup sugar
4 egg whites
1/2 teaspoon salt
20 Ritz crackers
1/2 teaspoon baking powder
8 ounces cream cheese, softened
2 egg whites
3/4 cup sugar
3/4 cup whipping cream
1 teaspoon vanilla
strawberry
1 cup nuts (walnuts or pecans)

Steps:

  • Preheat oven to 290F.
  • Whip egg whites, when they start to rise add sugar and salt.
  • In a separate bowl combine crackers (crushed), nuts and baking powder.
  • Fold the egg white mixture into the dry ingredients with a spatula.
  • Put in a 9 inch springform pan.
  • Bake for 40 minutes, turn oven off and take out when oven is cold. (You may do this over night).
  • Whipped topping:.
  • Blend cream cheese to soften.
  • In another container whip whipping cream.
  • Fold together with a spatula.
  • Beat eggs (on stove in a double boiler to heat eggs) when they start to get stiff add sugar. Keep on stove until sugar is dissolved.
  • Add vanilla.
  • Keep beating until they are extremely stiff.
  • Combine with cheese mixture with a spatula let set in fridge for a minimum of 4 hours.
  • When serving:.
  • Meringue on bottom then whipped cream then top with strawberries.

A glass of this Spanish coffee is the perfect energy booster! It's made with kahlua, triple sec, and rum for a spiked drink.

Number Of Ingredients 8

3 oz coffee
2 oz kahlua
1/2 oz or other orange liqueur triple sec
1/2 oz or white or dark aged rum
for dipping the glass granulated sugar
lemon wedge
(1 large spoonful) or vegan whipped cream, whipped to soft peaks sweetened whipped cream
or fresh grated or ground nutmeg, for garnish grated chocolate

Steps:

  • Make the coffee. Allow it to cool slightly while preparing the drink.
  • Make the homemade whipped cream, whipping it to soft peaks.
  • Use a lemon wedge to wet a ½-inch of the rim of the glass and dip the outside in sugar to make a ½-inch band.
  • Use a kitchen torch to caramelize the outside of the glass until the sugar turns brown.
  • Add the coffee, Kahlua, triple sec and rum and stir once.
  • Gently float the whipped cream on top using the back of a spoon. Garnish with grated chocolate or nutmeg. Enjoy!
