6 oz. cream cheese, softened to room temperature
1/2 c. powdered sugar 
2 1/2 c. heavy cream
Zest of two lemons 
1 (11-oz.) box Nilla wafers
1 c. lemon curd, store-bought or homemade
1 lemon
1/4 c. simple syrup

Steps:

  • In the bowl of a stand mixer (or in a large bowl with a hand mixer), cream the cream cheese and powdered sugar on medium speed until smooth, about 2 minutes. Add the heavy cream and continue to mix on medium speed until medium peaks form, about 3 minutes. Fold in the lemon zest.
  • Spread 1 to 2 tablespoons of the cream cheese mixture onto the bottom of a 9"x13" dish (to prevent cookies from sliding around), then cover it with a single layer of Nilla wafers. Top cookies with about 1/3 of the cream cheese mixture, using an offset spatula or back of a spoon to spread into an even layer. Drizzle this layer with approximately 1/2 of the lemon curd and lightly swirl in. Cover the curd with another layer of cookies and repeat, finishing with a layer of the cream cheese mixture. Cover the dish with plastic wrap and freeze for 3 hours.
  • While the cake is freezing, use a vegetable peeler to slice long strips of peel from a lemon. (Be careful not to go too deep; you want to avoid the bitter white pith.) Slice the strips into very thin strips and soak in simple syrup for 3 hours or up to a week in the refrigerator.
  • Remove the cake from the freezer and garnish with the candied lemon peel. Freeze any leftovers for up to 7 days.

1 (3 ounce) box lemon Jell-O gelatin
3/4 cup vegetable oil
3/4 cup water
4 eggs
2 lemons, juice of
2 cups powdered sugar
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees.
  • Combine cake mix, Jello mix, oil, water and eggs at low speed and then beat at high speed for 3 minutes.
  • Pour into a greased and floured 9 x 13 inch pan and bake for 40 minutes.
  • While baking, mix the lemon juice and powdered sugar together until well combined.
  • While cake is still hot, poke hole in it with a fork all over the top.
  • Pour lemon juice mixture all over it.
  • Cool completely and frost with whipped topping.
  • Store in refrigerator.

Sour cherries seem to be an elusive fruit. Finding them fresh in the supermarket is nigh on impossible and finding them at a greengrocer or farmers market seems almost as hard. Thankfully, the frozen variety is a little easier to track down and I hoard them when I see them. I would encourage you to get your hands on some for this dessert. You can use regular sweet cherries, but the flavor won’t be quite the same, so double the lemon juice, reduce the sugar a little, and add a few drops of almond extract to get you close. You can either freeze this, akin to a semifreddo, which is my preference, or simply chill it in the refrigerator, which will, of course, give it a softer finish.
