Medium Cheddar Cheese
Granny Smith apple
Italian or sourdough bread
1/3 cup olive oil
1/3 cup honey
1/2 cup Dijon mustard
1/4 cup Mayonnaise
1 tablespoon cider vinegar
1/8 teaspoon garlic powder

Steps:

  • Layer Applegate Black Forest Ham, Applegate Aged Cheddar, and thinly sliced Granny Smith apple on slices of rustic Italian or sourdough bread. Lightly brush the top of sandwiches with olive oil and grill on a panini press until golden brown. If you don’t own a panini press, place the sandwiches in a heavy skillet, and weigh the panini down with a smaller skillet and a teapot filled halfway with water. Cook the panini over medium heat until the bottoms are nicely toasted and golden brown. Flip the panini over and repeat. Serve panini with honey mustard sauce for dipping. To make honey mustard sauce:Whisk all ingredients together in a mixing bowl until well blended.

steak mince 300g
garlic salt 2 tsp
mild chilli powder 1 tsp
oil for frying
emmental 4 slices
pastrami 8 slices
burger buns 4, toasted
sauerkraut 4 tbsp
dill pickles
mayonnaise 4 tbsp
horseradish sauce 1½ tbsp
tomato ketchup 2 tbsp
Worcestershire sauce 1 tsp
echalion (banana) shallot 1, finely chopped

Steps:

  • Mix together all the dressing ingredients and season.
  • Mix together the mince, garlic salt, chilli powder and lots of black pepper. Divide into four balls then use clean hands to squish down into very flat patties. Don’t worry about getting perfect round edges as the craggy bits will get nice and crisp.
  • Rub a little oil on all of the burgers and season. Heat a large heavy frying pan until hot then fry the burgers for 2 minutes on each side. Add a slice of cheese and a couple of slices of pastrami to each burger then cover the pan to let the cheese melt and the pastrami warm through (use a baking tray if you don’t have a lid).
  • To assemble, spread dressing generously on both sides of the buns. Add a spoonful of sauerkraut to the bottoms, followed by the burger, cheese, pastrami and some dill pickles. Stick on the tops and eat.
