COCONUT-BRAISED MUSHROOMS WITH GINGER AND SCALLIONS



Coconut-Braised Mushrooms With Ginger and Scallions image

Mushrooms take a bath in coconut milk and emerge perfectly browned and slicked in spiced coconut oil.

Provided by Chris Morocco

Yield 4 servings

Number Of Ingredients 9

1 1" piece ginger, peeled, finely chopped
4 garlic cloves, crushed
1 13.5-oz. can unsweetened coconut milk
1 Tbsp. soy sauce
1½ tsp. curry powder
12 oz. mixed mushrooms (such as king trumpet, crimini, shiitake, and/or oyster), stems trimmed, halved or torn if very large
½ cup Peppadew peppers in brine or other mild chiles
Kosher salt
2 scallions, thinly sliced

Steps:

  • Bring ginger, garlic, coconut milk, soy sauce, and curry powder to a simmer in a medium skillet, stirring to combine. Add mushrooms and stir to coat well. Gently simmer mixture, stirring and scraping bottom of pan occasionally, until most of the coconut milk is evaporated and mixture has separated into translucent coconut oil and aromatics that are beginning to brown, 35–40 minutes.
  • Add peppers to skillet; cook, stirring and scraping bottom of pan often, until mushrooms are lightly browned, 5–10 minutes. Season with salt.
  • Divide braised mushrooms among shallow bowls and top with scallions.

Number Of Ingredients 13

Non-aerosol cooking spray
2 bunches scallions
chopped into 1-inch pieces
2 jalapeno peppers
seeded and chopped
Salt and pepper
¼ cup olive oil
2 inches ginger
peeled and finely chopped
4 cloves garlic
thinly sliced
2 teaspoons Korean chili flakes or red pepper flakes
1 pound fresh Korean noodles or linguini

Steps:

  • Heat a pot of water to boil for noodles
  • Heat cast-iron skillet over medium-high heat
  • Listicle: Rachael Ray 12-Inch Cast Iron Frying Pan Add cooking spray to hot skillet and char the scallions and chili peppers until crisp and blackened at edges, 3 minutes
  • Season with salt and pepper and remove from pan
  • Add oil and turn off heat, then add ginger, garlic and chili flakes and let the residual heat in pan mellow them and infuse the oil
  • Cook noodles 4 to 5 minutes or linguini 7 minutes
  • Drain, then add to oil, toss and season with salt to taste
  • Top with scallions and chilis to serve
