SALMON EGG-FRIED RICE RECIPE - BBC GOOD FOOD
An omega-3 rich, family friendly simple salmon supper. Let the kids choose how much heat they like by serving hot sauce on the table alongside

Steps:
- Mix the ginger, garlic, soy and vinegar, and set aside. Heat a large pan or wok and add 1 tbsp oil, the vegetables and salmon. Fry the salmon for 2 mins each side until it begins to turn opaque. Tip in the rice and stir, flaking the fish into large pieces, then move everything to the side of the pan.
- Add the remaining oil to the pan, crack in the eggs and stir to roughly scramble them. Once cooked, stir through the rice and pour over the soy marinade. Season and leave to bubble away for a few mins more, so that all the rice is coated in the sauce. Serve in bowls with hot sauce for drizzling.

We love a pasta bake and this salmon version is light and creamy at the same time as satisfying, and so easy to make!

Steps:
Preheat the oven to 180 degrees
Cook the salmon en papillote, with some olive oil, clove garlic, squeeze of lemon and season with salt and pepper to taste, for 15 minutes
Boil the pasta for 15 mins until al dente
Cook the leeks in the butter and garlic, once softened season and add the flour to coat all the leeks
Add the milk a little at a time until you have a thick creamy sauce, now add the yogurt and mustard along with the parsley and mint and stir well – season well with black pepper
Add your cooked pasta to an oven proof dish, then add the salmon layer, flaking across all the pasta removing any bones.
Now add the creamy leeks over the top covering right to the edges
Sprinkle over the breadcrumbs and season lightly again
Put this in the oven until golden brown on top – about 15 minutes should do the trick!
