6 large eggs, separated
2 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup fresh orange juice
1/2 cup canola oil
2 tablespoons grated orange zest
1/2 teaspoon cream of tartar
ORANGE GLAZE:
1/2 cup butter
2 cups confectioners' sugar
2 to 4 tablespoons fresh orange juice
1/2 teaspoon grated orange zest

Steps:

  • Let eggs stand at room temperature for 30 minutes. In a large bowl, combine the flour, sugar, salt and baking soda. In a bowl, whisk the egg yolks, orange juice, oil and orange zest; add to dry ingredients. Beat until well blended. , In another large bowl and with clean beaters, beat egg whites and cream of tartar on high speed until stiff peaks form. Fold into orange mixture. , Gently spoon batter into an ungreased 10-in. tube pan. Cut through the batter with a knife to remove air pockets. Bake on the lowest rack at 350° for 45-50 minutes or until top springs back when lightly touched. Immediately invert pan; cool completely. Run a knife around sides and center tube of pan. Invert cake onto a serving plate. , For glaze, melt butter in a small saucepan; add remaining glaze ingredients. Stir until smooth. Pour over top of cake, allowing it to drizzle down sides.

1 3/4 cups all-purpose flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
2 teaspoons freshly grated orange zest
1/3 cup Land O Lakes® Butter
1/2 cup sweetened dried cranberries
1 large Land O Lakes® Egg beaten
4 to 6 tablespoons Land O Lakes® Half & Half
1 large Land O Lakes® Egg beaten
Orange Butter
1/2 cup Land O Lakes® Butter softened
2 tablespoons orange marmalade
2 tablespoons sugar

Steps:

  • Heat oven to 400°F.
  • Combine flour, 3 tablespoons sugar, baking powder and orange zest in bowl; cut in 1/3 cup butter with pastry blender or fork until mixture resembles fine crumbs. Stir in cranberries, 1 egg and just enough half & half until dough leaves sides of bowl.
  • Turn dough onto lightly floured surface; knead lightly 10 times. Roll into 9-inch circle. Place onto ungreased baking sheet; cut into 12 wedges. (Do not separate.)
  • Brush with 1 beaten egg; sprinkle with 2 tablespoons sugar. Bake 17-19 minutes or until golden brown. Cut wedges apart; immediately remove from baking sheet to cooling rack.
  • Combine 1/2 cup butter and orange marmalade in bowl. Beat at medium speed, scraping bowl often, until well mixed. Serve butter with warm scones.
