1 head of broccoli (375g)
6 large free-range eggs
1 heaped teaspoon English mustard
300 g cottage cheese
50 g Cheddar cheese
3 tablespoons red pesto
270 g filo pastry

Steps:

  • Preheat the oven to 180°C/350°F/gas 4. For the filling, trim the tough end off the broccoli stalk. Coarsely grate the remaining stalk, then break the florets apart. Lightly beat the eggs in a bowl, add the mustard, cottage cheese and grated broccoli stalk, grate in the Cheddar, add a pinch of sea salt and black pepper and mix together. Loosen the pesto with 3 tablespoons of water. Lay two sheets of pastry in an oiled loose-bottomed tart tin (25cm wide, 4cm deep), overlapping them in the middle. Brush all over with some of the pesto mixture, then repeat the layers until you’ve used up all the pastry, brushing with pesto as you go. Roll and scrunch the filo in at the sides, like in the picture. Pour in the filling, then poke in the broccoli florets. Place on a baking tray and cook at the bottom of the oven for 50 minutes, or until golden and set. Let it rest for 10 minutes before tucking in.

I’ve made my own version of the classic Caesar salad, which is a little bit healthier on the dressing – it’s all about taking influences from the original dish and bigging up the flavours and textures where you can.

Number Of Ingredients 8

1 cos lettuce or romaine
1 clove of garlic
2 tablespoons olive oil
½ a lemon
30 g Parmesan cheese plus extra to serve
2 teaspoons Worcestershire sauce
75 g low-fat natural yoghurt
2 anchovy fillets in olive oil

Steps:

    1. Snap off and discard any wilting or dark green outer lettuce leaves. Trim the leaves, then cut the head into quarters lengthways. Chop into chunks and get rid of the core. Wash under cold running water and dry in a salad spinner.
    2. To make the dressing, peel and finely chop the garlic, mix with the olive oil, and put in a bowl. Grate in the Parmesan and squeeze in the lemon juice. Add the Worcestershire sauce and yoghurt, and whisk together.
    3. Roughly chop and add the anchovies, season with a little sea salt and freshly ground black pepper, and whisk again.
    4. Toss the lettuce in the dressing, then scoop the salad into a serving bowl.
    5. Coarsely grate over a little extra Parmesan, if you like. Toss again, then serve.

    1. Preheat the oven to 200ºC/400ºF/gas 6.
    2. Use a speed-peeler to strip the lemon zest into a large casserole pan on a medium heat, then add 2 tablespoons of oil and the garlic bulb.
    3. Peel and quarter the onions and separate into petals, destone the olives, and slice the potatoes 1cm-thick. Add to the pan, pick in the oregano leaves and cook for 5 minutes, or until just starting to soften and colour.
    4. Quarter and add the tomatoes, then season to taste with sea salt and black pepper.
    5. Pour 500ml of water into the pan and bring to the boil, stirring well and scraping up any sticky bits from the bottom.
    6. Discard just the tatty outer leaves from the cauliflower, then cut a cross into the stalk and push it right down to the bottom of the pan.
    7. Drizzle with 1 tablespoon of oil, cover, then place in the oven for 1 hour, or until golden and caramelised, basting occasionally and removing the lid halfway through.
    8. Remove the cauliflower to a serving platter and pick out the garlic bulb, then place the pan back over a medium heat on the hob, stir in the peas or broad beans, and simmer for 5 minutes.
    9. Carefully squeeze all the garlic out of the skins and stir back into the pan. Taste and tweak the seasoning, if needed, then pour over the cauliflower and finish with a good squeeze of lemon juice.
