Bacon-Cheese Puff Pie Recipe: How to Make It image

This recipe comes from my grandma, and it's one of my family's favorites. We love the combination of bacon, tomatoes and cheese for brunch at any time of year.

1 pastry shell, unbaked
1 pound sliced bacon, cooked and crumbled
1 large tomato, peeled and sliced
1 cup shredded cheddar cheese
3 large eggs, separated
3/4 cup sour cream
1/2 cup all-purpose flour
1/2 teaspoon salt
Paprika

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil. Bake 5 minutes longer. Cool completely. , Sprinkle bacon over the crust. Top with tomato and cheese. In a large bowl, beat the egg yolks, sour cream, flour and salt until smooth. In another large bowl, beat egg whites until stiff. Fold into sour cream mixture; spread over cheese. Sprinkle with paprika. , Bake at 350° until a knife inserted in the center comes out clean, about 45 minutes. Let stand 5-10 minutes before cutting.

1 cup sliced fresh mushrooms
1 tablespoon butter
3 ounces cream cheese, softened
6 large eggs, room temperature
1 cup 2% milk
3/4 cup biscuit/baking mix
3 cups frozen chopped broccoli, thawed
2 cups shredded Monterey Jack cheese
1 cup 4% cottage cheese
1/4 teaspoon salt

Steps:

  • In a small skillet, saute mushrooms in butter until tender. In a large bowl, beat the cream cheese, eggs, milk and biscuit mix just until combined. Stir in the broccoli, cheeses, salt and mushrooms. , Pour into a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° until a thermometer reads 160°, 50-60 minutes. Let stand for 10 minutes before serving.
