1/4 cup sugar
2 tablespoons butter, melted
2 tablespoons corn syrup
1 1/4 teaspoons ground cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
2 cups unsalted dry roasted peanuts

Steps:

  • In large bowl, combine sugar, butter, corn syrup, cinnamon, salt, and nutmeg. Add peanuts, toss to coat. Transfer to 15x10x1 inch baking pan.
  • Bake at 300 for 20-25 minutes or until bubble and golden brown, stirring once. Be sure to keep an eye on these. Cool on wire rack; break apart if necessary. Store in an airtight container.

3/4 cup all-purpose flour (spooned and leveled), plus more for fingertips
1/4 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons unsalted butter, room temperature
1/2 cup sugar
1/2 cup smooth peanut butter
1 large egg
2 chocolate-covered toffee candy bars (1.4 ounces each), chopped

Steps:

  • Preheat oven to 350. In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, with an electric mixer on high speed, beat butter and sugar until light and fluffy. Add peanut butter and egg; beat until smooth. With mixer on low, gradually add flour mixture. Stir in toffee.
  • Using 1 level tablespoon batter per cookie, drop onto baking sheets, about 1 inch apart; flatten slightly with floured fingertips. Bake until edges are golden brown, 16 to 18 minutes, rotating sheets halfway through. Transfer cookies immediately to a wire rack to cool completely.

  • Line a 15x10x1-inch baking sheet with parchment paper or silicone liner. Lay Club crackers in a single layer to cover the bottom of the pan. Set aside. Preheat oven to 375°F. In a small saucepan over medium-high heat, melt butter. Add in sugar and bring to a rolling boil, stirring constantly. Once boiling, add ¼ cup peanut butter and stir until smooth. Pour over crackers. Place in oven on middle rack and cook for 10 minutes. Remove from oven and cool completely. In a small, microwave safe bowl, combine white chocolate chips with peanut butter. Microwave for one minute, stir until smooth. If not completely melted, heat for 15 second intervals, stirring each time to test for smoothness. Pour over slightly cooled (they can still be a little warm) toffee. Cool completely (I put it in the refrigerator to speed set the toffee). Once cooled, cut into bite sized pieces and enjoy. Store in airtight container.
