SHRIMP FRIED RICE, LOW FAT & THM "E" - MY TABLE OF THREE



Shrimp Fried Rice, Low Fat & THM

A low fat and delicious Shrimp Fried Rice great for any night of the week.

Number Of Ingredients 10

3-4 cups cooked brown rice
12 oz peeled and cleaned shrimp
1 1/2 cups frozen peas and carrots
4 chopped green onions
2 egg whites (optional)
2 Tbsp soy sauce or Braggs Aminos
1 tsp toasted sesame oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground ginger

Steps:

  • If using frozen shrimp you will need to thaw them before cooking your rice.
  • Prepare the brown rice per the directions on the package and sit aside. I some times do this the day before or when I'm rushed I even buy the steamer bags of brown rice at the grocery store.
  • In a skillet over medium heat add in the frozen peas and carrots and chopped green onions. Then add in one tablespoon of the soy sauce. Since there is no oil in the pan you will need to stir often to prevent sticking.
  • Once your veggies have cooked a few minutes add in the shrimp and cook for about 3-4 minutes or until the shrimp are nice and pink.
  • Add in the cooked rice, the remaining 1 tablespoon of soy sauce and the spices. Stir to incorporate before drizzling in the egg whites.
  • Once the egg whites are added add in the 1 tsp of sesame oil and stir again. Cook the mixture for another 2-3 minutes to cook the eggs.
  • Serve hot with optional garnishes of more green onions and chopped radishes.

1 box (13.25 ounces) Dreamfields angel hair pasta OR 1 spaghetti squash
2 tablespoons unsalted butter
4 cloves garlic, minced
1 shallot, minced
1 pound frozen cooked shrimp, thawed and tails removed
1 teaspoon mineral salt
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried dill
½ teaspoon red pepper flakes, optional*
¼ teaspoon ground black pepper
¼ cup heavy cream
½ cup fresh grated Parmesan cheese
¼ cup grated mozzarella cheese
1 tablespoon lemon juice

Steps:

  • Prepare the pasta according to package directions or cook spaghetti squash. Drain pasta and set aside or scrape out spaghetti squash strands and set aside.
  • In a large skillet, melt the butter over medium-high heat. Add the garlic and shallot and saute until tender, about 2 or 3 minutes.
  • Add the shrimp. Saute until heated through, stirring often.
  • Add salt, garlic powder, onion powder, dill, red pepper flakes, and black pepper. Saute until these spices are toasty, about a minute or two, stirring often.
  • Add the remaining ingredients. Stir until cheese has melted and sauce has heated up.
  • Add the noodles to the skillet and mix together with the shrimp and sauce. If there isn't enough moisture, you can add some unsweetened almond milk a little (like a tablespoon) at a time until the sauce spreads enough to cover the noodles.
